Lemon Butter Orange Roughy with Spicy Lemon Cabbage

When my children were young, the time came when I wanted to introduce them to fish. I chose orange roughy because it’s a white fish with a very mild flavor that can be seasoned to taste. Once I chose the fish I would use, I decided to broil it with lemon, butter, and seasonings. That’s when I first made my Lemon Butter Orange Roughy. Years later, I added my father’s spicy lemon cabbage recipe to the meal and from then on, it became my delicious Lemon Butter Orange Roughy with Spicy Lemon Cabbage!

The part that makes any fish a delicious meal is what seasonings you choose to add to the fish. I love fish when seasoned well, so when I chose what seasonings to use on my orange roughy, I chose those seasonings I felt would enhance the flavor of the fish. It still wasn’t all that complicated, but I’m sure you’ve heard of the saying “less is more.” Well, that saying holds true here. Too much seasoning and you lose the real flavor of the fish you are cooking. You want to enhance it, not smother it!

2 to 4 orange roughy fillets
1 to 2 tablespoons whipped unsalted butter per filet
Onion powder to taste
Garlic powder to taste
Granulated lemon peel to taste
Paprika to taste

Set the oven on broil. I set the oven on high broil. Rinse the fish fillets and place on a broiler pan. I use disposable broiler pans with fish because I feel it’s easier, but that’s up to personal preference. Put pieces of butter over each entire fillet, 1 to 2 tablespoons. Then sprinkle on the onion powder, the garlic powder, the granulated lemon peel, and the paprika to taste. I usually sprinkle each seasoning lightly over the tops of each fillet. Once done, put the fillets in the oven right under your broiler for 3 to 8 minutes or longer if needed, depending on the thickness of your fillets. Watch carefully so as not to overcook. The fish should flake away easily with a fork when done. My fillets took 6 minutes to cook.

My Lemon Butter Orange Roughy with Spicy Lemon Cabbage is delicious! Serve with slices of extra lemon, lemon cabbage, and a white wine. Poppy’s Spicy Lemon Cabbage, my father’s recipe goes well with orange roughy because of the lemon flavor, but you can serve any vegetable with it. Lime Basil Pesto Chicken with Garlic Butter Kale and Sweet Corn

When cooking boneless chicken breasts, I often find myself thinking about new ways to do so deliciously. Chicken breasts are easily cooked in a wide variety of sauces, grilled with marinades or basting sauces, baked with a crust of some sort, and so many different other ways. That’s why I love chicken and decided to bake it in a basil pesto sauce with lime. This turned out to be a great choice, and how I came up with my recipe for Lime Basil Pesto Chicken with Garlic Butter Kale and Sweet Corn, and believe me when I say, it’s delicious!

Loving a good pesto with pasta, I have always made my own basil pesto sauce. But the pesto sauce for my chicken was done a little differently, using less cheese and putting the basil nuts on the baking chicken in the last few minutes. I also added fresh lime juice to the basil pesto mixture for this chicken, giving it an additional great flavor. While cooking this, I created a new vegetable side dish for this chicken, using my garden fresh kale and some fresh sweet corn right off the cob. Lime Basil Pesto Chicken with Garlic Butter Kale and Sweet Corn

2 to 4 boneless chicken breasts
1 cup fresh basil leaves
1/2 cup extra virgin olive oil (plus 1 tablespoon for browning the chicken)
1 teaspoon chopped garlic
2 fresh limes juiced
1/4 cup Parmesan Reggiano cheese grated
Sea salt and fresh ground black pepper to taste
1/4 cup pine nuts

Preheat the oven to 350 degrees. Spray fresh olive oil on the baking dish for the chicken. For the lime basil pesto, blend together in a blender the half cup of olive oil, basil leaves, garlic, lime juice, cheese, and a little sea salt and ground pepper to taste. Then brown the chicken breasts lightly in 1 tablespoon of olive oil. Season the chicken breasts lightly with sea salt and ground black pepper.

Once done, place the lightly browned chicken breasts in the baking dish. Pour the lime basil pesto over the chicken and bake uncovered for 20 minutes. Then cover the baking dish and bake for 20 minutes more. Finally, uncover the baking dish and pour the pine nuts whole over the chicken and sauce. Spoon some sauce over the pine nuts and continue to bake for 5 minutes longer.

My Lime Basil Pesto Chicken with Garlic Butter Kale and Sweet Corn is delicious! This chicken dish goes wonderfully with my Garlic Butter Kale and Sweet Corn. Each dish compliments the flavor of the other dish. If there is any pesto sauce left in the baking dish, it is great for dipping a crusty bread. Serve this meal with a wine and a crusty loaf of bread for dipping. You will love the rich flavors of this great dish and side vegetable, so enjoy!

Crock Pot Bolognese Sauce with Ground Sirloin

One of the many ways I express my love for my family is through my cooking, but more importantly, cooking delicious food that is healthy as well, such as my Crock Pot Bolognese Sauce with Ground Sirloin. Raised by a health conscious Italian mother, just like my beautiful mother, I want my family to enjoy long healthy lives.  By eating healthy, I mean eating well without sacrificing flavor. I believe eating healthy does not mean giving up great tasting and delicious meals.  In fact, quite the opposite is true.  My belief has always been that I can cook delicious meals for my family that are both healthy and satisfying, leaving us to savor the rich flavors while sharing good times. Crock Pot Bolognese Sauce with Ground Sirloin is both delicious and healthy.

For that reason, I began making my Bolognese sauce with lean ground sirloin years ago.  My mother used lean ground round for her meatballs, and I followed her lead, but later I chose to go leaner still by using lean ground sirloin when I made both my meatballs and my Bolognese sauce, a choice I have never regretted.  When my mom and dad ate Bolognese in my home, they both loved it, so I knew I made the right choice.  Knowing my Crock Pot Bolognese Sauce with Ground Sirloin is more heart healthy makes my choice a winner for my family. As an added bonus, when I make my sauce in a crock pot, I always make enough for several meals, so with this recipe you will have enough to freeze for later meals.

Crock Pot Bolognese Sauce with Ground Sirloin (This recipe makes four quarts of sauce, enough sauce to freeze servings for later)

2 to 3 tablespoons extra virgin olive oil
2 pounds lean ground sirloin
2 medium to large onions sliced or chopped
4 cloves garlic chopped
2 teaspoon basil or use 2 tablespoon fresh basil cut up
1 teaspoon dried or ground oregano or 2 teaspoons fresh oregano
1 teaspoon ground red pepper (optional)
3 to 4 cups fresh mushrooms slice or two 4 ounce cans sliced mushrooms
Two 28 ounce cans crushed tomatoes or tomato puree
One 6 ounce can tomato paste
2 tablespoon sugar (some people prefer to use 2 to 3 carrots finely shredded or chopped for sweetness)
1/4 to 1/2 cup water (1/2 cup red wine is optional)
Freshly grated imported Parmesan Reggiano cheese
Pasta of your choice

After putting the olive oil in and spreading it around the bottom of the crock pot, put the ground sirloin at the bottom of your pot. Turn the crock pot on high, so the ground sirloin will start to cook slightly while you add the other ingredients. Put the onions, garlic, basil, oregano, red pepper (optional), and mushrooms on top of that. Gently stir together the ingredients added so far, breaking apart the ground sirloin. Then add tomato puree or crushed tomatoes, tomato paste, and water as needed, usually about 1/4 to 1/2 cup of water, depending on desired consistency. Add in the sugar if you do not use carrots.  If using carrots, put the carrots in with the onions, garlic, seasonings, and mushrooms.  Carefully stir everything together and then cover the crock pot setting the heat for 4, 6, or 8 hours, whichever you prefer, stirring at the end.

Be ready to boil the pasta of your choice once the sauce is ready or nearly ready. By the way, if you lay a wooden spoon across the top of your pot of boiling water for the pasta, usually it will not boil over. Keep an eye on it nonetheless, so as not have any unexpected problems. I was surprised myself, but this works well. When the pasta is ready, drain your pasta and add your sauce, gently mix the two together. Then serve with freshly grated imported Parmesan Reggiano cheese. Any leftover sauce can be stored in freezer containers and frozen for later use. This recipe makes four quarts, enough for four meals.
