Sweet Butternut Squash with Chopped Walnuts

For years candied sweet potatoes were a favorite in our home, especially around the holidays, but that’s changed in the last several years. Now Sweet Butternut Squash with Chopped Walnuts has taken first place and become the favorite.

https://learnfromyesterday.comI decided to make this recipe several years back during the holidays, and now we make it whenever we can get butternut squash. It’s basically the same recipe we used on the baked sweet potatoes, minus the miniature marshmallows for a topping that some people use. I was never a big fan of marshmallows, so I eliminated those long ago. I added chopped walnuts instead, and it turned out great!

First of all, it wasn’t sweet potatoes, but worse than that, I left out the marshmallows that I usually put on the holiday sweet potatoes. Then there were also those who thought adding walnuts was just crazy, but I told them just try it because they were going to love it. They did, and they do! They loved it, and now this recipe would be missed if I didn’t make it. On top of that, I now serve this dish more often when we get together for a family meal. It’s not just for holidays anymore.

Sweet Butternut Squash with Chopped Walnuts

2 pounds butternut squash diced/cubed
1/2 to 3/4 cup brown sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger
About a 1/4 cup whipped butter unsalted
3/4 to 1 cup chopped walnuts

Preheat oven to 375 degrees. Prepare your baking dish with butter or cooking spray. Blend together in a small mixing bowl the brown sugar, cinnamon, nutmeg, and ginger. Put a layer of diced butternut squash into the dish. Follow this with little dabs of the butter across the surface. Then sprinkle this layer with some of the brown sugar mixture. Finally, sprinkle some of the chopped nuts across the top of this layer. Do this again with each new layer until the baking dish is filled. I usually have about three layers total. When done, put the dish covered in the oven to bake at 375 degrees for 50 to 60 minutes or until tender. After 30 minutes of baking, remove the cover from the dish and toss the squash with a spoon mixing together the butternut squash, melted butter, and spices. Then finish baking uncovered. Be sure to test the potatoes with a fork to see if they are done.

The lightly sweet taste of the butternut squash will enhance any meal and is sure to please everyone. This dish may even replace your traditional sweet potato recipe. Delicious Oven Baked Seasoned Steak Fries

When preparing a meal for several guests, it’s always nice to have an easy but tasty potato side dish to serve. Delicious Oven Baked Seasoned Steak Fries are both tasty and easy to prepare as well as healthy.

https://learnfromyesterday.comUsually I scrub the skins of the potatoes earlier, and then set them aside to dry whole. We all know that baking potatoes whole is easy, but it takes longer to bake them, and you can’t season them or anything, so they are just a baked potato. That’s fine, but if you want something a little different and delicious, this is definitely the dish for you!

I like my guests to feel that they are special enough for me to do something a little extra for them. That something can definitely be both healthy and taste delicious. Seasonings and a little extra virgin olive oil can make all the difference, and it’s not that difficult to do. Besides, with a baked potato, people tend to load them up with not so healthy choices, while these potatoes need no extra garnishes!

6 to 8 baking potatoes (depending on the number of people and size of the potatoes)
Extra virgin olive oil
Garlic powder
Onion powder
Dried parsley flakes
Sea salt and black pepper to taste (for after baking)

These are the basic seasonings, but you can add any other seasonings you may like. Preheat your oven to 475 degrees. Prepare your baking sheets with parchment cooking paper. Cut the each potato in half and then cut the halves into ¼” to ½” slices to create your steak fries just before you are ready to cook. You may do this sooner and leave in cold water, but I prefer to do it just before baking.

Put the slices in a large bowl and pour some olive oil over the slices. Toss the slices until all of them are coated with some olive oil. They do not need to be drenched, but just coated. Once coated in olive oil, place the slices evenly on your baking sheets. Sprinkle them to taste with the garlic powder, onion powder, and parsley flakes. You may add any additional seasonings you may like, but if serving guests, I suggest you always ask about preferences as some people may not like or tolerate well certain seasonings. When done seasoning, place the baking sheets in the oven for about 20 minutes or until fork tender. Watch them carefully when baking so that you do not burn them.

Once done, place your Delicious Oven Baked Seasoned Steak Fries in a dish and serve along with the rest of the meal. Your guests may add salt and pepper to their own taste, but they don’t really need it with the seasonings already used. I don’t usually put salt on the table, just a whole peppercorn grinder, and rarely does anyone request the salt. These steak fries are always a winner with those eating, but the best part is that they are full of great flavor and healthy. On top of that, they are really easy to put together and adaptable to the tastes of your guests as well. Try them, and enjoy!

Strawberry Kale Salad with Sliced Almonds…So Healthy and Good!

We were getting to ready to have Italian Basil Pesto with pasta, and I decided we needed a salad to go with the pasta. I had some kale in the crisper, so I decided to make it a kale salad.

Using kale in a salad is so much better than using lettuce primarily because of all the health benefits of kale. With this in mind, I put together Strawberry Kale Salad with Sliced Almonds…So Healthy and Good!

This salad was really easy to put together for our meal.  I took the kale from our garden that I had stored in our refrigerator crisper and started to plan how I would put together my salad. I checked to see what I had in the refrigerator. I had fresh strawberries and some green onions from the garden. I, also, had some sliced almonds on hand. As a result, this is what I came up with for my salad.

Strawberry Kale Salad with Sliced Almonds…So Healthy and Good!

3 to 4 cups of fresh kale cut up
2 green onions sliced and chopped
3/4 cups strawberries, sliced and halved
1/8 cup sliced almonds
Newman’s Own Lite Balsamic Vinaigrette or salad dressing of choice

Cut and tear up the kale leaves. Add chopped green onions, sliced strawberries, and sliced almonds. Add in salad dressing, toss, and serve.

This Strawberry Kale Salad with Sliced Almonds is so healthy and good! It goes well with a balsamic dressing or any other salad dressing of your choice. A kale salad makes a delicious and healthy addition to any meal or even just by itself. Serve this salad before a pasta dish or alongside a meal with chicken or beef. We served it with pasta, and it was great.  Whatever you decide to serve it with, you will love it. So enjoy!
