Light and Easy Honey Lime Cole Slaw

I love the idea of cole slaw, but I’m not a big fan of using mayonnaise. I prefer a healthier version of cole slaw with great flavor that will make it more than just a side dish. I want it to delight my taste buds. Believe me when I say, this Light and Easy Honey Lime Cole Slaw will make even the most doubtful cole slaw eater a believer. It’s full of flavor that will keep you heart healthy and happy!

Don’t get me wrong, there are times when I will use mayo, but this is just not one of those times. In my cole slaw, I prefer a vinegar base with extra virgin olive oil, but to add sweetness and some zest, I add honey and fresh lime juice. It definitely isn’t rocket science, but  it definitely is delicious! Use it as a side dish, on fish tacos, on pulled pork sandwiches, or any number of ways.

Light and Easy Honey Lime Cole Slaw

3 cups shredded cabbage and carrot mixture
1/2 cup red cabbage shredded
1/8 cup apple cider vinegar
1/4 cup extra virgin olive oil
1 fresh lime juiced
2 teaspoons organic honey (or more to taste)
Sea salt and ground black pepper to taste

Mix together the together the cabbage and carrot mixture with the red cabbage. Add the vinegar, olive oil, lime juice, and honey. Finally, carefully season your cole slaw to taste with sea salt and ground black pepper.

Red Lettuce Salad with Apple, Goat Cheese, and Honey Mustard Vinaigrette

For my salad, I added some goat cheese and Granny Smith apples because I love both. 1 green onion chopped
1 Roma tomato halved and sliced
About 1/3 Granny Smith apple diced with skin
2 tablespoons crumbled goat cheese

Homemade Honey Mustard Vinaigrette (or dressing of your choice)

Spread the apple pieces over the top of the salad, followed by the goat cheese. Tasty Guacamole with Sweet Chili Pita Chips

I love guacamole ever since we spent some time in Puerto Vallarta, Mexico. While there we had some of the best guacamole I had ever tasted. It was absolutely delicious and so tasty! I have tried to recreate this guacamole ever since that time, and I finally think I have succeeded with my Tasty Guacamole with Sweet Chili Pita Chips. The pita chips are something I found here in local stores, but the guacamole is my own adaptation of all the different recipes I have tried.

https://learnfromyesterday.com I start with the typical ripe avocados, cilantro, fresh lime juice, and onion. For me, it only seemed appropriate that I use a red onion. I then added jalapeno, which some recipes have and which I felt was a necessity in order to do this right. I added my favorites, minced garlic and Roma tomato. I then added ground black pepper and a little sea salt to complete my Tasty Guacamole with Sweet Chili Pita Chips. The Sweet Chile Pita Chips came about when I purchased a package for hummus a while back and everyone here loved the chips.

4 ripe avocados
2 limes, juiced
1 Roma tomato diced
1/2 cup red onion diced
1/2 cup cilantro chopped
1 jalapeno with seeds removed and diced (for more heat add 2 jalapenos)
1 teaspoon garlic minced
1 teaspoon ground black pepper Sea salt to taste

Cut the ripe avocados in half, remove stone, and scoop out the flesh with a spoon. Cut the flesh of the avocados into pieces and add the juice of two limes. Add to this the Roma tomato, red onions, cilantro, jalapeno, garlic, and black pepper. Add sea salt to taste and mix up thoroughly with a spoon. Once done, you are ready to serve. Serve with pita chips or chips of your choice.
