Delicious Sirloin Meatballs with Jalapenos or Not

By Jodee Weiland

Meatballs are not just for a meal of spaghetti and meatballs. There are restaurants that serve meatballs just on their own as a meal. Meatballs are also found in great sub sandwiches. Even more interesting is the fact that meatballs are now made with a variety of things, like jalapenos. We love meatballs both with and without jalapenos. It all depends on how we are having them or what our mood is at the time. Another important factor for us when eating meatballs is what type of meat and ingredients are used. We love meatballs that are made with lean ground sirloin and no bread fillers. That’s why we love my Delicious Sirloin Jalapeno Meatballs!

Now some people would say that meatballs without pork or veal can’t be very tasty, but they would be wrong. Why? Well, the reason is because the sirloin on its own taste great, but with the right seasonings and ingredients, a sirloin meatball can be absolutely delicious. I add grated Parmesan Reggiano to my meatballs plus seasonings to give my meatballs a flavor you will love. My mother always added grated Parmesan Reggiano, and I loved them. For me, bread crumbs are just a filler, so I don’t use them. If done right and gently turned while browning, the meatballs will not fall apart. The jalapenos are an add-on here, but they are also optional. If you prefer, leave the jalapenos out, and the meatballs will still taste great. These meatballs are seasoned right and are definitely delicious!

Delicious Sirloin Meatballs with Jalapenos or Not

  • 1 egg (or two egg whites)
  • 1 to 2 garlic cloves chopped more or less to taste
  • 1/2 medium onion chopped or 1/2 tablespoon dried chopped onion
  • 1 teaspoon dried parsley
  • 1 teaspoon dried basil (you can substitute fresh chopped basil)

  • 1 medium to large jalapeno chopped (optional)

  • 1 tablespoon extra-virgin olive oil

Heat olive oil in frying pan. Mix the ingredients for the meatballs in a bowl. Shape the meat into six or more meatballs. Put the meatballs in the heated pan and brown the meatballs on all sides over a low to medium heat by gently turning them a few times. Using a nonstick pan makes this easier, if you prefer.

Some onions, etc., may fall away from the meatballs as you turn them. This is fine because it will blend into the sauce when you add the tomato puree. Once browned, pour the tomato puree over the meatballs. When the sauce begins to bubble, lower the heat to simmer, cover the pan, and cook for about 15 to 20 minutes or until done.

Healthy and Delicious All Natural Applesauce (No Sugar Added)

By Jodee Weiland

I love a good applesauce, whether it’s with a meal or just by itself! What I don’t like is when my applesauce has all kinds of sugars and other ingredients that are not really necessary. Apples have such great flavor on their own, so when we make applesauce, why do we think we need to add sugar. When I make apple sauce, I let the apples do the talking for me, so to speak. I add very little to my Healthy and Delicious All Natural Applesauce (No Sugar Added)!

https://learnfromyesterday.com

Making applesauce is really a very easy process, especially if you have an Apple Machine that peels and cores your apples while slicing them as well. These little machines are great for all kinds of apple recipes and cost very little. But even if you have to peel, core, and cut up the apples yourself, it isn’t all that hard. It will just take more time. Once you get this part of the process done when making applesauce, the rest is easy!

Healthy and Delicious All Natural Applesauce (No Sugar Added)

  • About 4 pounds of apples peeled, cored, and cut up or sliced
  • 1 cup water
  • 1 and 1/2 tablespoons lemon juice
  • 1 teaspoon cinnamon or more to taste

Peel, core, and cut up or slice the apples. Put the apple pieces in a large pot. Add the water, cover, and bring to a boil. When the water starts to boil, lower the heat to a simmer. Cover the pot and simmer for 10 to 20 minutes until tender, stirring occasionally. The amount of time it takes for the apples to become tender enough to puree will depend on the variety of the apple you choose and the maturity of the apples used.

When the apples are done, turn off the heat and allow them to cool slightly. Once cool enough, put them into a blender and add the cinnamon and lemon juice. Depending on your blender or food processor, you may want to do this in two batches. Blend thoroughly until smooth. When done blending, pour into containers and let cool in the refrigerator. Once cool, freeze whatever you will not be using in either plastic covered containers leaving an inch of space at the top or plastic freezer bags with the excess air squeezed out. Applesauce will freeze up to one year, but this is so good, it doesn’t usually last that long.

Healthy Parmesan Hasselback Potatoes

By Jodee Weiland

Some people feel that having a potato with a meal is going to cause weight gain, but the reality is that it isn’t the potato that does this. What does this is what we put on those potatoes and how much we have. One way to avoid adding the wrong things to potatoes is a healthy hasselback potato made using olive oil and seasonings that will add all the flavor you need. A hasselback potato done right needs very little salt or none at all because the flavor will come from the seasonings. And if you want a potato with some cheese flavor, have a hasselback potato sprinkled with grated Parmesan Reggiano cheese. Done this way, my Healthy Parmesan Hasselback Potatoes are both delicious and healthy!

Eaten as baked and seasoned in the recipe, these hasselback potatoes will be both delicious and healthy. It’s when people add sour cream, butter, bacon bits, some higher calorie cheeses, and more that you have problems. Hasselback potatoes done using this recipe don’t need all those additional toppings, because they will taste wonderful without them. You won’t even miss the idea of butter when you use an extra virgin olive oil, as I do in this recipe. You really don’t even need extra salt, and if you do use the sea salt, be sure to do so lightly because the Parmesan cheese has salt as well. Once you try potatoes this way, you will be a believer for sure!

Healthy Parmesan Hasselback Potatoes

  • 4 large russet potatoes or potatoes of your choice
  • 4 tablespoons extra virgin olive oil
  • Sea salt and ground black pepper to taste
  • Paprika to taste
  • Onion powder to taste
  • Garlic powder to taste
  • 4 tablespoons Parmesan Reggiano cheese grated to taste
  • 1 tablespoon finely chopped chives

Preheat the oven to 425 degrees. Wash and scrub the potato skins well with a vegetable brush. Dry the potatoes and slice them across the width 1/8″ to 1/4″, but do not cut through the potato. Stop your slice before cutting all the way through creating a sliced potato with the bottom still in one piece. Place the potatoes in a baking dish that has been sprayed lightly with olive oil. With a food brush, brush about half the olive oil over the top of the four potatoes. Lightly sprinkle the potatoes with sea salt and black pepper to taste. Bake at 425 degrees for 30 minutes.

After 30 minutes, remove the potatoes from the oven to brush them once again with the remainder of the olive oil. Sprinkle the onion powder, garlic powder, and paprika over the potatoes to taste. Remember to season lightly because a little bit goes a long way with flavor.  Bake for another 20 minutes or longer if needed to bake thoroughly.

https://learnfromyesterday.comAfter 20 minutes, check to see if the potatoes are almost done. If not, bake for 5 to 10 minutes longer. Then remove from the oven and sprinkle the potatoes with Parmesan Reggiano cheese. Put them back into the oven and finish baking for another 10 minutes longer. When done, sprinkle the tops with fresh chopped chives and serve.
