Delicious Homemade Crusty Bread

By Jodee Weiland

When making a meal like pasta, stew, or soup, it’s always great to have a crusty bread to serve with it. So many dishes are enhanced by adding crusty bread to your meal, but especially if your crusty bread is homemade. My Delicious Homemade Crusty Bread is not only delicious to eat with a great meal, but if done right, it’s great by itself straight from the oven. https://learnfromyesterday.com My father used to love to break off a crusty piece of bread from the loaf and have it with a little cheese and a glass of red wine. He thought this was a great snack any time and honestly, I can’t disagree! He always chose a hard imported provolone and if he had it on hand, he would add a slice of hard Italian salami. But many times, he chose to have just the slice of fresh crusty bread! My Delicious Homemade Crusty Bread is the type of bread my father would have loved, crusty on the outside and a light airy bread on the inside!

3 and 1/2 cups bread flour (the last 1/4 cup or less to be added as needed)
1/2 teaspoon salt
1 tablespoon sugar
1 teaspoon active dry yeast
1 and 1/2 cups warm water (1/2 cup of this will be for the yeast mixture)
2 tablespoons extra virgin olive oil

Preheat oven to 375 degrees.  Prepare the baking sheet by misting olive oil over the baking sheet lightly. Then in a small mixing bowl, mix 1 teaspoon of active dry yeast and a pinch of sugar with 1/2 cup of warm water that is water that is warm to the touch, about 100 degrees. Stir this and let it rest for about 10 minutes until it becomes foamy.

Then in a large mixing bowl, gradually blend together the flour, salt, sugar, yeast and water mixture, 2 tablespoons of olive oil, and remaining water as you begin to work this with your hands into dough. At first, you may blend the ingredients with a spoon, but as it thickens you will work it with your hands. Once your dough is all blended, continue to work the dough with your hands and begin to knead the dough for about 8 to 10 minutes. Do this on a flat surface, where you will add flour as you go to the surface to keep your dough from sticking.

https://learnfromyesterday.com https://learnfromyesterday.com https://learnfromyesterday.com Once done, place your ball of dough into a bowl, smoothing a touch of olive oil over the dough and over the sides of the bowl.  Cover the bowl loosely with plastic wrap and then with a clean towel over that for about 30 to 40 minutes or longer and let it rest.  It should double in size.https://learnfromyesterday.com https://learnfromyesterday.com https://learnfromyesterday.com

Remove the dough from the bowl and knead it again before shaping into two long narrow loaves. Place your loaves on the prepared baking sheet and cover loosely with the plastic wrap from the bowl and a towel while it sits.  Once again, it should double in size.  Then with a sharp knife cut (1/4 inch deep) slits diagonally across the top of the loaf.  Put the bread into the preheated oven and bake at 375 degrees for 25 to 35 minutes.  My bread took about 30 minutes to bake.  Allow bread to cool briefly before cutting and serving, although in my family, they start cutting or breaking off pieces as soon as it cools just enough to be able to touch. https://learnfromyesterday.com My Delicious Homemade Crusty Bread is so good with its crusty outside and a light airy bread on the inside. This bread is the perfect complement to any meal, but with the fall coming, it will be a great side for soups, stews, and other hearty meals. You can always eat it on its own like my dad did, but no matter how you choose to eat this bread you will always come back for more. We love this bread, especially fresh from the oven. Give it a try, and enjoy!

Homemade Apple Cider Beer Batter Bread

By Jodee Weiland

Homemade beer batter bread is so easy and quick to make, it’s almost like making it from the box. While the box recipes simply add a bottle of beer and stir lightly, homemade beer batter bread recipes use anywhere from three to five ingredients depending on the recipe you choose to follow. I looked over dozens and tried a few in the past. None of them are really all that different from each other, but a couple of things stood out for me. So what I’m giving you here is my idea of what makes the best beer batter for what I call Homemade Apple Cider Beer Batter Bread. For me the difference is in the brown sugar and the apple cider beer.

https://learnfromyesterday.com

Some recipes merely use flour, beer, and sugar. Others use the same with brown sugar in place of regular sugar. I prefer the brown sugar and the flavor it adds to the bread. Still other recipes will go on to add baking powder and salt. Although I’m not a big fan of salt, it’s really so little, it barely makes a difference. The salt is used because of the baking powder, and together it will help the bread raise more. I like that idea, so I use these two ingredients as well. The last thing I changed was the beer to apple cider beer. I wanted bread with a touch more sweetness. These five ingredients come together to make an easy and delicious Homemade Apple Cider Beer Batter Bread!

3 cups all-purpose flour
4 tablespoons light brown sugar
1 tablespoon baking powder
1 teaspoon salt
1-12 ounce apple cider beer at room temperature
Unsalted butter to grease the loaf pan

Preheat oven to 375 degrees. Prepare a loaf pan by greasing it lightly with unsalted butter. Then mix all of the dry ingredients together in a bowl. Once blended together, add the bottle of apple cider beer. As you pour it into the dry ingredients, it will foam. Stir together for lightly, about 20 to 25 strokes. It will still be lumpy when you spoon it into your loaf pan.

Bake at 375 degrees for thirty to forty minutes. Test readiness by putting a toothpick in the center and pulling it out. If the toothpick comes out of the bread clean, the bread is ready.

My Homemade Apple Cider Beer Batter Bread is delicious and goes well with just about any dish or just by itself with a little butter. It would be delicious with soups, stews, salads, and along with a meat dish and vegetables. But with its slight touch of sweetness, a slice of this bread with some butter is great, especially when it’s warm from the oven. So however you decide to have this bread, always enjoy!

Italian Bread…Nothing Better than Fresh Baked Bread

By Jodee Weiland

Being Italian, I know how important good Italian bread is to complete an Italian meal.

https://learnfromyesterday.com

When I was growing up, my parents always had Italian bread in the house.  It complemented many different meals in our home from pasta dishes to soups to Italian beef and more.  It was even sometimes used as a teething ring for the babies in the family.

https://learnfromyesterday.comThat’s true!  It seemed that every baby in our family was handed a fresh loaf of Italian bread to gum to death when teething.  Of course, they were watched closely as the traditional family picture of the baby was taken holding a loaf of Italian bread to their mouths and attempting to chew on it.  The babies were all naturals at this process, and mom and dad were always overjoyed to see them do this.  Today, those are fond memories held by all the children and grandchildren.

That’s why making Italian bread is so much more than just making the bread for me.  It’s memories of family that go along with this process of baking the bread that make it special for me.  So enjoy this recipe and hopefully, you will have some memories of your own that making this bread will bring back to you as well in one way or another.

2 tablespoons olive oil
1 gently beaten egg white

https://learnfromyesterday.comThere’s nothing quite like fresh baked Italian Bread.  No matter what meal you serve it with, your family will enjoy it.  This bread recipe is a basic Italian bread recipe, but you could add whatever you like to it.  This basic recipe can be the base for a cheese bread or olive bread or any type Italian Bread you want.  Next time I make it, I am going to make it with a cheese and some jalapenos.  Try it out and see how many different ways you can vary it.  I think you will like it, even if you just choose to make just the basic recipe.  So try it, and enjoy!
