Tilapia with Spicy Fresh Balsamic Tomato Salsa

When baking tilapia, your options for adding flavor are unlimited. One way to add flavor is to cook the tilapia with a sauce or seasonings. Another option is to add a sauce or salsa of some sort when serving the cooked tilapia by spooning it over the fish. Either way, changing the taste is limited only by your own imagination. With a garden of fresh tomatoes, green onions, peppers, and more, I decided to serve my baked Tilapia with Spicy Fresh Balsamic Tomato Salsa.

My fresh tomatoes consist of a variety of different types. For this dish, I chose Roma tomatoes and yellow cherry tomatoes. I decided to add some green onions for flavor along with a small Dragon Cayenne pepper to add a little more flavor and kick. Of course, if you don’t like spicy, then you can always make the recipe for the fresh balsamic tomato salsa without the pepper. Either way, it’s a delicious salsa full of flavor and will take your baked tilapia over the top in taste!

3 to 4 tilapia fillets
5 to 6 Roma tomatoes diced
4 to 5 yellow cherry tomatoes halved
2 green onions sliced
1 small Dragon Cayenne pepper (optional)
2 tablespoons extra virgin olive oil (plus some to mist baking dish and fillets)
1 tablespoon balsamic vinegar
Sea salt and freshly ground black pepper to taste

Preheat the oven to 425 degrees. Use olive oil spray on rectangular baking dish. Rinse fillets, but if they are frozen, it is not necessary to thaw them. Then arrange fillets in the baking dish. Spray a light mist of olive oil on top of each filet. Place baking dish in oven and cook for 15 to 17 minutes. While the fish is baking or before, prepare and mix together the tomatoes, green onions, pepper, olive oil, and balsamic vinegar. Season it with sea salt and black pepper to taste. When the fillets are done baking, put each fillet on a serving dish and then spoon the tomato salsa generously over the top.

One of the ways I try to keep fit is by counting my steps each day with a steps counter. A steps counter is a device that tracks how many steps you take a day based on your personal length of stride. These devices called steps counters are made by a variety of companies and come with many different options for counting and tracking steps, as well as your personal health growth in this area of your life. Many people lead what could be called sedentary lives. In other words, they lead lives with either no physical activity or very little, and on top of that they don’t incorporate any physical activity to balance out that lack of physical activity. They either work at jobs where they sit most of the day or for one reason or another, stay at home and become what is known as a “couch potato.” Children and active young adults usually do not have these problems, but more and more young people are sitting in front of computers today and doing less physical activity. If that’s the case, it’s time to find out and do something about it for your health and well-being!

When people retire, many have a tendency to go about their day-to-day lives without realizing that their physical activity levels have dropped off, and that’s when people may see a decline in fitness or health. My first steps counter was very simple and very inexpensive. Years ago, the school nurse where I taught, offered us all the chance to purchase a steps counter for a discounted price of $10 from a program called 10K-A-Day, Stepping Up to Better Health. I had always worked out, so this sounded great to me. I wanted to know how many steps a day I was actually taking. The challenge was to take 10,000 steps a day, the equivalent of 5 miles. Although I easily reached that number on most days of the week just moving around our large high school and in my classroom working with students, I was amazed to find that on days when students were testing or when I was grading essays or reading a novel once again that I was about to teach, I was not moving as much as I had thought. That opened my eyes, and I realized that on days like that I needed to be sure to take the time to workout or intentionally find ways to keep moving in order to stay healthy!

Later, I upgraded my steps counter to an OMRON Go Smart HJ-112 steps counter. The first one I bought counted steps, but not much more. This newer one had a seven-day memory, while tracking steps, distance, calories and fat burned, as well as aerobic steps and time. This added some new dimensions into my discovery of my daily walking and workout habits. It was very useful in helping me find what types of activities helped me the most when attempting to eat right and stay actively healthy!

It wasn’t too long after that when the steps counter developers came out with devices that could be hooked up to your personal computer and your step activity, both aerobic and non-aerobic could be tracked online. In this way, the user could see visually what they were doing day by day. That is when I upgraded to the steps counter I am using now. It doesn’t look much different because it is an OMRON Go Smart HJ-720ITC, but it is the PC version and is Windows compatible. That means I can connect to my computer and see a graph of my personal activity levels, both aerobic and non-aerobic, and my progress.

There are many other step counters available now, including FITBIT, which is now compatible with both Windows and Apple. Earlier it was not compatible with the system I was using, so I chose OMRON. The steps counter from OMRON was also less costly at that time. I paid about fifty to sixty dollars through an online site when I purchased mine. These step counters have clips, so you can wear them on a belt or carry it in your pocket without the clip. Some track well while wearing them in a variety of ways. Just be sure that the one you get fits what you are looking for and how you want to be able to wear it. They even have devices that are Bluetooth capable and will sync with your computer automatically now. That will be my next purchase!

Bottom line, Stepping Out and Keeping a Count with a Steps Counter is a great way to track your activity, while eating healthy and staying fit. My doctor loves the fact that I have been able to keep my weight down and have great results on my yearly health screenings. I think eating healthy and keeping active is key to attaining this result. I like to track all of this and more because then I know what I’m doing and how I need to adjust my activity to fit my personal health goals. Being healthy means having a more active lifestyle, and I’m all for that. Citrus Thyme Grill Roasted Chicken and Vegetables

I recently purchased a mesh roasting pan. This mesh basket can be used on a gas grill for roasted chicken and vegetables. I couldn’t wait to try it. So once it was delivered, I decided to do just that, a grill roasted chicken and vegetables. It turned out fabulous, and I am so happy I made this purchase. My Citrus Thyme Grill Roasted Chicken and Vegetables was delicious, and I felt the mesh basket made it easier to do!

I used fresh limes and thyme from my garden to season the chicken with a few additional seasonings. The roasted vegetables were cleaned and cut while the chicken began to cook on the grill. I then put extra virgin olive oil on all my vegetables which I seasoned with garlic, onion, sea salt, and ground black pepper to taste. I placed the vegetables in the mesh basket along the sides of the chicken during the last five to ten minutes, making sure they did not overcook. The result of this adventure in grilling was a wonderful dinner that was both delicious and healthy!

7 to 8 pound roasting chicken whole
Fresh thyme (small bunch)
4 to 5 fresh limes halved
Garlic powder to taste
Onion powder to taste
Parsley to taste
Sea salt and fresh ground black pepper to taste
Extra virgin olive oil (enough to coat the entire chicken and vegetables)
2 bell peppers (orange and yellow) each cut in four pieces with seeds removed
1 white onion cut four pieces
1 to 2 zucchinis washed and sliced with skin on in half in wide slices

Prepare the gas grill by heating to about 375 degrees, medium indirect heat. Prepare the chicken by rinsing it and removing extra pieces inside the chicken cavity. Once done, cut two limes in half and place the halves in the cavity with a small bunch of thyme tied together with twine. Brush olive oil liberally over the entire outer surface of the chicken. Then tie the legs together with twine. Squeeze the juice of one lime over the chicken. Place the chicken in the center of the mesh roasting pan/basket. Then sprinkle the chicken with garlic powder, onion powder, sea salt, ground black pepper, and parsley to taste. When done, place the basket on the racks of the gas barbecue grill. While cooking prepare the cut up vegetables by coating them with olive oil, and then seasoning them with garlic powder, onion powder, sea salt, and black pepper to taste.

My chicken cooked a little over two hours over the medium indirect heat, but we opened the lid several times for pictures. Times may vary, so use a meat thermometer to check on whether the chicken has reached the appropriate temperature to be done, approximately 180 degrees. When you cut your chicken, the breast meat should be white, not pink. In the last five to ten minutes of cooking, add the prepared vegetables on both sides of the chicken in the mesh basket. Watch the vegetables carefully, to be sure not to overcook. I prefer my al dente, but you may prefer them roasted more than that. It’s a personal choice.
