Thick Green Smoothie Magic with Almonds

By Jodee Weiland

Lately, I’ve been trying out some thicker smoothies that would be filling and could take the place of a meal while being nutritious and healthy as well. One thicker smoothie I put together was especially tasty. I think this smoothie was so good because of the addition of almonds. It’s much thicker than my regular smoothie, but the almonds also make it more filling. Almonds are heart healthy and since I love them, I felt certain they would add something great to the flavor. I was right, and the result was my Thick Green Smoothie Magic with Almonds!

This smoothie has fresh mango, apple, and unsweetened pineapple juice, all of which have numerous vitamins and nutrients. It also has frozen spinach for a green vegetable, which gives it even more nutritional value. By including almonds I’ve add protein, because an ounce of almonds contains about one eighth of our necessary daily protein. The inclusion of almonds make this smoothie heart healthy and gives it the thick consistency I was looking for, making it more filling and a possible substitute for a breakfast or a mid-day meal without bread. That is exactly what I was trying to create with this new smoothie!

  • 1 Granny Smith apple unpeeled, cored, and cut up
  • 1 cup fresh frozen mango slices
  • 1/2 cup almonds
  • 1 and 1/2 cups unsweetened pineapple juice
  • 1 cup frozen spinach

In a blender, blend together the apple, the mango, the almonds, and the juice until smooth. Add in the frozen spinach and once again blend until smooth, but thick. This recipe will make approximately two ten ounce servings. It can also be made less thick by adding additional juice, if preferred.

My Thick Green Smoothie Magic with Almonds is delicious and very healthy! This thicker smoothie could easily take the place of a breakfast or a mid-day meal without bread, while still satisfying your hunger. It has great nutritional value, which includes twelve grams of fiber and about 15 grams of protein. There are 404 calories in one serving or half of the recipe, but for a meal this is relatively low. High in fiber, protein, and nutrients, this smoothie will satisfy your hunger, while keeping you healthy, so enjoy!

Healthy and Delicious All Natural Applesauce (No Sugar Added)

By Jodee Weiland

I love a good applesauce, whether it’s with a meal or just by itself! What I don’t like is when my applesauce has all kinds of sugars and other ingredients that are not really necessary. Apples have such great flavor on their own, so when we make applesauce, why do we think we need to add sugar. When I make apple sauce, I let the apples do the talking for me, so to speak. I add very little to my Healthy and Delicious All Natural Applesauce (No Sugar Added)!

Making applesauce is really a very easy process, especially if you have an Apple Machine that peels and cores your apples while slicing them as well. These little machines are great for all kinds of apple recipes and cost very little. But even if you have to peel, core, and cut up the apples yourself, it isn’t all that hard. It will just take more time. Once you get this part of the process done when making applesauce, the rest is easy!

Healthy and Delicious All Natural Applesauce (No Sugar Added)

  • About 4 pounds of apples peeled, cored, and cut up or sliced
  • 1 cup water
  • 1 and 1/2 tablespoons lemon juice
  • 1 teaspoon cinnamon or more to taste

Peel, core, and cut up or slice the apples. Put the apple pieces in a large pot. Add the water, cover, and bring to a boil. When the water starts to boil, lower the heat to a simmer. Cover the pot and simmer for 10 to 20 minutes until tender, stirring occasionally. The amount of time it takes for the apples to become tender enough to puree will depend on the variety of the apple you choose and the maturity of the apples used.

When the apples are done, turn off the heat and allow them to cool slightly. Once cool enough, put them into a blender and add the cinnamon and lemon juice. Depending on your blender or food processor, you may want to do this in two batches. Blend thoroughly until smooth. When done blending, pour into containers and let cool in the refrigerator. Once cool, freeze whatever you will not be using in either plastic covered containers leaving an inch of space at the top or plastic freezer bags with the excess air squeezed out. Applesauce will freeze up to one year, but this is so good, it doesn’t usually last that long.

Fabulous Shrimp Creole with Rice

By Jodee Weiland

An old favorite here in our home is Shrimp Creole. Shrimp Creole is a dish that I first made long before I ever had children years ago. The rich flavors of Shrimp Creole have always made it a favorite of mine. Those flavors are a blend of flavors from several countries, who all found themselves in the port of New Orleans. Some of those countries were Italy, Spain, and Portugal. The savory flavors of these countries and others long ago created the delicious food selections found in New Orleans, as well as whole new languages they used to communicate among themselves, pidgins and creoles. It was when I was studying these languages in a linguistics class during a master’s program, that I fell in love with New Orleans from a distance, and later when I visited, I was in love forever. All of this gave new meaning to my Fabulous Shrimp Creole with Rice.
