Chicken Breasts with Sweet Peppers, Onions, and Garlic

By Jodee Weiland

For many years now, one of my favorite dishes is Chicken Breasts with Sweet Peppers, Onions, and Garlic. This simple dish is full of delicious flavor, but is really very simple to make.

https://learnfromyesterday.comPreparing the sweet peppers, onions, and garlic is just a matter of cleaning and cutting these three ingredients first. Then you simply sauté the prepared vegetables in extra virgin olive oil until the onions are translucent. Set aside this mixture and brown the boneless chicken breasts after seasoning them to taste. Once done, everything goes in a prepared baking dish and into the oven to bake.

It doesn’t get much easier than that, but the end product is full of great flavor and gives you a moist delicious chicken breast meal to eat. One thing for sure, you have prepared a meal that will definitely please everyone. My family loves this meal, and it’s a meal that I found easy to prepare after working all day years ago.  It’s a meal that looks and tastes like something from a restaurant, but in fact, is homemade and healthy. Sometimes the easier meals are the best ones, if they have the delicious flavor that everyone expects from a meal well done!

Preheat the oven to 375 degrees and spray your baking dish lightly with olive oil.  Clean and cut the sweet peppers, onions, and garlic. In a skillet, add the olive oil and heat slightly. Then add the peppers, onions, and garlic to the skillet and sauté until the onions are translucent. Just before removing from the skillet, add the worcestshire sauce with white wine for chicken to the mixture and let heat slightly. Remove this mixture to a bowl, so you can now lightly brown the chicken breasts after seasoning to taste with salt and pepper. Once browned, add the chicken breasts to your baking dish. Pour the mixture of peppers, onions, and garlic over the chicken breasts. Cover and bake at 375 degrees for 45 minutes. Then remove the cover and bake for 5 minutes longer, watching carefully, so you do not burn the vegetables.

Once done, the Chicken Breasts with Sweet Peppers, Onions, and Garlic will be ready to serve. We like to have a side of broccoli with this dish and a crusty loaf of bread. This dish is great as is with a baked potato as well or even just a salad. The chicken breasts are moist and succulent. However you choose to serve it, you will be eating a healthy meal with delicious flavor coming from those fresh peppers, onions, and garlic. This simple recipe will delight your senses, so give it a try and enjoy!

Ways to Workout at Home Easily and Stay Healthy!

By Jodee Weiland

Working out to stay healthy is a way of life for me, and it can be for you, too. There are so many Ways to Workout at Home Easily and Stay Healthy!

Working out 2 001 (500x375)

That said, my one word of caution to any of you would be to consult with your doctor before starting any workout routine, especially if you have never worked out before or have had health problems. I’m not a fitness trainer or expert, but I know what works for me and what doesn’t because I have been working out at least three to five times a week for most of my adult life. Lately, I work out daily. With age comes certain advantages making that easier to do. For one thing the children are grown up and on their own. And for another thing, I’m now retired after years of teaching. Both factors make it easier to workout daily and feel great!

Nonetheless, even if you have children at home or work, you can still workout three to five times a week or even more, if you choose to do so. It doesn’t have to cost a fortune to do so either. When my children were young, I used a number of ways to workout and be at home with them. Later when I returned to the work, I continued to workout at home on weekends and evenings. One inexpensive way I chose to workout was to use DVD’s or video tapes years ago. There are fitness experts by the dozens out there making work out DVD’s for you to be able to use in your own homes. You can choose DVD’s for walking workouts, yoga, dance, and more. Choose DVD’s anywhere from beginners to advanced levels of difficulty. You just have to decide which of these will work for you!

Working out 002 (500x375)

One of my favorites, and definitely one that just about anyone can use, is the Leslie Sansone’s Walk at Home series. Leslie Sansone has DVD’s for people at all levels of fitness, and she makes working out fun and easy using her four basic steps. I’ve used many of her tapes for years, even while I was travelling. It’s so easy to carry a DVD with you when you travel and play it on a lap top or hotel/condo DVD player. You can even use her walk boosters, from resistance bands to handheld weights and more, to intensify your workout. Order online or shop at stores, you will find such a wide variety of tapes, you’ll be able to change up your workout often. As Leslie says often on her tapes, you need to change it up a little so that the muscles will work harder, and she’s right!

Another way I change it up is to use my exercise mini trampoline (see my earlier post for more information), which I use just about every day because I love it so much. You can purchase one inexpensively at a sporting goods store, a warehouse store, or even a retail store, or you can pay more money for an expensive brand, if you really want to do so. Years ago, I was looking for an alternative to a treadmill and found a Rebounder Mini Trampoline. At first I thought it was some sort of toy, but on closer inspection, I realized it was an inexpensive, easy to use, and easy to store piece of workout equipment. At the time, the price was about twenty-five dollars and much easier to afford than a treadmill, so I thought to myself, “Why not?” I decided to give it a try, and that has been a decision I have never regretted to this day.

Mini Trampoline 002 (500x375)

I’ve replaced it several times over the years from wear and tear. My latest one cost me fifty dollars plus tax at a sporting goods store. I jog in place on my mini trampoline at least an hour a day, but more often than not I will jog longer or sometimes even more than once a day. This inexpensive piece of equipment works no matter what the weather is outside, and I can do it while I watch the news or whatever else is on the television. I love it, and even though I have a workout room in my home with a treadmill and an elliptical, as well as weight training equipment, plus more, I still use my mini jogger every day! I use the other equipment as well, but not as frequently because this is easier to fit in to my schedule no matter what’s going on during the day.

There are so many Ways to Workout at Home Easily and Stay Healthy! Whatever you decide to do to keep fit and healthy, you won’t regret the choice because in the long run you will feel and look better as a result. Keep in mind that it is important to eat well if you want to lose weight or maintain weight and stay healthy. Working out should never be an excuse for poor eating habits. I use a Mediterranean diet for the most part. It’s what I grew up with in my childhood home, and it’s delicious as well. It’s also a healthy way to eat according to most doctors, but that doesn’t mean you can eat unlimited amounts of pasta.

When you eat, eat to live as the saying goes. Don’t live to eat! Moderation is a good rule of thumb. Sometimes we eat fast and feel overstuffed afterwards. That’s because when you eat, it takes time for your stomach to register fullness. Pace yourself and enjoy your meal while you enjoy those you’re sharing your meal with or that wonderful book you’re reading. Eat right and make eating healthy a habit and a way of life, not a diet. Be sure to check out some of my recipes. Once you do, find ways to workout that are right for you and stay healthy by eating right as well! Enjoy life!

Pasta Langostino with Fresh Zima Tomatoes and Spinach in Olive Oil and White Wine Sauce

By Jodee Weiland

When we went to the store today, they had langostino lobster tails, cooked and peeled, so we decided to buy some. Originally, I had been thinking about making a pasta with shrimp, Zima grape tomatoes, and baby spinach in an olive oil and white wine sauce. But in spite of this, when I saw the langostino lobster tails, I immediately thought this would be even better with the Zima grape tomatoes I had bought earlier.

https://learnfromyesterday.com

Zima grape tomatoes are orange in color and deliciously sweet. This all led to my latest recipe, Pasta Langostino with Fresh Zima Tomatoes and Spinach in Olive Oil and White Wine.

https://learnfromyesterday.comKeep in mind that langostino lobster tails are not really lobster. In fact, they are what is commonly referred to as squat lobster by most people in the restaurant business. They are actually crustaceans more closely related to hermit crabs, but if you like them, none of this matters. Personally, I like both shrimp and langostinos, but I can always get shrimp. On the other hand, I do not see langostinos as often, so I decided this was a good choice for today. Remember, you can always make this same recipe with shrimp if you prefer.  Either way, I’m sure the pasta will be delicious. I hope you like my recipe for Pasta Langostino with Fresh Zima Tomatoes and Spinach in Olive Oil and White Wine Sauce as much as we did!

https://learnfromyesterday.comPasta Langostino with Fresh Zima Tomatoes and Spinach in Olive Oil and White Wine Sauce

1 pound pasta of your choice
1/3 cup of extra virgin olive oil
1/4 cup of white wine (I used Riesling)
2 and 1/2 cups Zima grape tomatoes (you can use other tomato types if preferred)
3 chopped garlic cloves
8 to 9 basil leaves sliced or 1 tablespoon dried basil
1/4 to 1/2 teaspoon crushed red pepper (optional)
3 to 4 cups or more fresh baby spinach
1 pound langostinos (shrimp may be substituted)
Grated Parmesan Reggiano cheese to taste

On the stove, heat olive oil and add garlic, fresh basil (roll leaves and then slice) or dried basil, and white wine.  Then add fresh Zima grape tomatoes whole.  Cook covered over a medium heat until tomatoes cook, then reducing to low heat.  You can add the crushed red pepper at this time.

While tomatoes cook, prepare your pasta according to the package instructions.  When the pasta is about 4 minutes from being ready, add spinach leaves to the tomato mixture. Over a medium heat, cook the spinach until it is wilted and ready. Just prior to the pasta being ready, add the langostinos warming them. Once the pasta is done cooking, spoon the langostino, tomato, and spinach mixture over the pasta, stirring it in gently.  Add grated Parmesan Reggiano cheese to each serving or eat it as is.

Pasta Langostino with Fresh Zima Tomatoes and Spinach in Olive Oil and White Wine Sauce is a delicious meal full of flavor! Serve this meal with a crusty loaf of bread and wine. Once again, remember that you can always use shrimp if you would prefer to do so. Either shrimp or langostinos would work with this recipe. Whichever you choose, I know you will enjoy this meal. So, enjoy!
