Eight Awesome Smoothies

By Jodee Weiland

Smoothies should always be both healthy and delicious tasting! When someone drinks a smoothie, they are doing so for any number of reasons. One reason for drinking smoothies is that they are usually healthy and will energize you if made with the right ingredients. Another reason for drinking smoothies is that they taste delicious when made with the right ingredients. Both of these reasons are great, and both apply to my Eight Awesome Smoothies!

https://learnfromyesterday.com When I put together a smoothie, I try very hard to focus on including ingredients that will be both healthy and delicious tasting. Some of my smoothies include vegetables that are high in nutrients and are blended with the sweet tastes of fruits and honey. Others are more fruit than anything, but still have nutritional value. When I am going to work out or have just finished working out, I try to have a smoothie that includes a high nutrient packed vegetable like kale or spinach. When choosing the ingredients for a smoothie, keep in mind what benefits you hope to attain by drinking it.

Check out all of my Eight Awesome Smoothies! All of them are both healthy and delicious, but the ingredients vary according to the nutritional value I was looking for in each of them. Whichever one you choose to try, the flavor of the smoothie will not disappoint you because I believe a smoothie must taste good as well as be healthy for me. The nutritional value of fruits and vegetables is commonly acknowledged by most people. My smoothies just blend them together, so you will love the taste of each one while getting great nutritional value. So give these smoothies a try, and enjoy!

Delicious Berry Berry Vanilla Nonfat Frozen Yogurt

By Jodee Weiland

I love homemade nonfat frozen yogurt and enjoy coming up with new flavor combinations. Since I had recently frozen some fresh blueberries and had some fresh ripe strawberries, I decided that combining the two would make an awesome tasting nonfat frozen yogurt. I just needed to let the blueberries thaw slightly to puree them with the fresh strawberries. That’s how I came to make my Delicious Berry Berry Vanilla Nonfat Frozen Yogurt!

Making frozen yogurt with my automatic frozen yogurt-ice cream and sorbet maker, makes this whole process very easy. The one thing I did differently this time, besides changing my fruit choices, was to use almond milk in place of fat-free milk. I wanted to change it up a little more. Then I just put together my ingredients, set up the machine with my pre-frozen bowl from the freezer, poured in my mixture, and let the machine do its job for the next 25 to 30 minutes. What could be easier than that? Making up new flavors of frozen yogurt was never easier than this, and I’m loving it!

Delicious Berry Berry Vanilla Nonfat Frozen Yogurt

2 cups nonfat Greek yogurt
1/3 cup sugar (or the appropriate equivalent of non-sugar sweetener)
1 tablespoon pure vanilla extract
1/2 cup almond milk
1 cup fresh blueberries frozen and pureed (thaw slightly)
3/4 cup fresh strawberries cut up
Miniature dark chocolate chips to sprinkle on top (optional)

Puree the slightly thawed frozen blueberries with the cut up fresh strawberries in a blender. Then blend together the yogurt, sugar, vanilla, and almond milk in a mixing bowl with a hand mixer on medium speed until the sugar is dissolved, about one to two minutes. Once done, blend the berry mixture puree into the yogurt mixture with the hand mixer on low for about one minute. Following the directions of your yogurt/ice cream maker, turn it on and slowly pour in the blended yogurt and berry mixture. Once it is all in the yogurt maker, let the mixture thicken into your creamy frozen yogurt as the machine works its magic, usually about thirty minutes. When ready, scoop the frozen yogurt into serving dishes, putting any leftover frozen yogurt into a freezer storage container and freeze for later.

For a little something extra, sprinkle some miniature dark chocolate chips on top. Give it a try sometime soon, and enjoy!

Tilapia with Spicy Fresh Balsamic Tomato Salsa

By Jodee Weiland

When baking tilapia, your options for adding flavor are unlimited. One way to add flavor is to cook the tilapia with a sauce or seasonings. Another option is to add a sauce or salsa of some sort when serving the cooked tilapia by spooning it over the fish. Either way, changing the taste is limited only by your own imagination. With a garden of fresh tomatoes, green onions, peppers, and more, I decided to serve my baked Tilapia with Spicy Fresh Balsamic Tomato Salsa.

My fresh tomatoes consist of a variety of different types. For this dish, I chose Roma tomatoes and yellow cherry tomatoes. I decided to add some green onions for flavor along with a small Dragon Cayenne pepper to add a little more flavor and kick. Of course, if you don’t like spicy, then you can always make the recipe for the fresh balsamic tomato salsa without the pepper. Either way, it’s a delicious salsa full of flavor and will take your baked tilapia over the top in taste!

3 to 4 tilapia fillets
5 to 6 Roma tomatoes diced
4 to 5 yellow cherry tomatoes halved
2 green onions sliced
1 small Dragon Cayenne pepper (optional)
2 tablespoons extra virgin olive oil (plus some to mist baking dish and fillets)
1 tablespoon balsamic vinegar
Sea salt and freshly ground black pepper to taste

Preheat the oven to 425 degrees. Use olive oil spray on rectangular baking dish. Rinse fillets, but if they are frozen, it is not necessary to thaw them. Then arrange fillets in the baking dish. Spray a light mist of olive oil on top of each filet. Place baking dish in oven and cook for 15 to 17 minutes. While the fish is baking or before, prepare and mix together the tomatoes, green onions, pepper, olive oil, and balsamic vinegar. Season it with sea salt and black pepper to taste. When the fillets are done baking, put each fillet on a serving dish and then spoon the tomato salsa generously over the top.
