Scrambled Egg Whites with Ham, Vegetables, and Mozzarella

By Jodee Weiland

Breakfast was for dinner tonight with Scrambled Egg Whites with Ham, Vegetables, and Mozzarella. Eggs aren’t just for breakfast anymore because more and more families will have eggs, pancakes, or waffles for dinner these days, especially if they’re busy or have leftovers they want to use up creatively. When families bake ham for dinner, they usually have plenty of leftover ham to use in various dishes or soups. They will sometimes freeze some of it as well. We did this, and tonight, we decided to use the smaller leftover pieces in scrambled egg whites for dinner.

Normally, baked hams are cut in slices, but when slicing the ham, especially a ham on the bone, there will always be some chunky smaller pieces. These are the pieces that are great for chopping into small pieces to use in egg dishes or soups. With a little less than a cup of ham left now, I decided to just use it in scrambled egg whites. I added red onion, halved grape tomatoes, garlic, and mozzarella, and the results were both full of flavor and delicious!

6 egg whites beaten

1/2 cup red onion sliced
4 garlic cloves chopped
1 tablespoon extra-virgin olive oil
1/2 cup shredded mozzarella reduced fat

Sauté onions and garlic in the olive oil until slightly tender. Add the ham next and stir in gently continuing to sauté this mixture. Finally, add the tomatoes to the mixture and sauté for a minute or two more. Now take the beaten egg whites and pour them over the sautéed mixture. Let it cook a little then add the mozzarella cheese over all of it. Now stir the whole thing together creating your scrambled egg whites with ham, vegetables, and cheese. When done, you will be ready to serve. It’s that easy.

Scrambled Egg Whites with Ham, Vegetables, and Mozzarella are so easy to make and turn using leftovers into a delicious and healthy meal. Serve this dish with some fresh fruit and a crusty loaf of multigrain bread. Toast the bread slices for your meal if you desire to do so. Using egg whites makes this meal a healthier option, but it can be done with whole eggs as well. Either way, this meal is easy to make and full of flavor. You won’t be disappointed, so enjoy!

Grilled Salmon with Spicy Pineapple Citrus Sauce

By Jodee Weiland

When grilling salmon, we like to try different ways of doing this. Grilled salmon is great on its own, but sometimes you want a little something extra. We love sweet bourbon salmon and even just plain salmon, but it was time to try something new, and that led to Grilled Salmon with Spicy Pineapple Citrus Sauce.

https://learnfromyesterday.com/Grilled Salmon with Spicy Pineapple Citrus Sauce is the combination of sweet and spicy coming together in the best way. This recipe blends fresh pineapple with other citrus flavors and the spicy hot flavor of sriracha hot chili sauce. The combination of sweet and spicy add a little something extra to the taste of the grilled salmon, when used both as a basting sauce as you grill the salmon and as a sauce you pour lightly over the salmon when served. The results are wonderful and full of rich flavors!

In a blender, blend together the pineapple, lime juice, orange juice, honey, and sriracha hot chili sauce until smooth. Use one-third of the sauce to baste the salmon as you grill it. Reserve the rest to pour over the grilled salmon when served. Grill salmon to taste while basting with the sauce set aside for this purpose.

Mashed Sweet Potatoes with Walnuts

By Jodee Weiland

Sweet potatoes can be prepared in so many different ways, but one of my favorite ways to have sweet potatoes is Mashed Sweet Potatoes with Walnuts. Mashed sweet potatoes are always delicious, but when made with chopped walnuts and just the right seasonings, they have great flavor and crunch!

https://learnfromyesterday.com

Whenever I cook a baked ham or have a big turkey dinner with all the trimmings, I always find a way to add a side of sweet potatoes. Not only do they taste good, they are very nutritious as well. I make sweet potatoes in a number of different ways by roasting them, baking them, or mashing them, but this recipe is one of my favorites because of the crunch from the chopped walnuts that are added only after cooking and mashing the potatoes. Since the walnuts are not baked into the recipe, they retain all their crunchy goodness. Call me silly, but I really think that’s what makes this dish.

Mashed Sweet Potatoes with Walnuts

  • 4 sweet potatoes
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 2 tablespoons butter
  • 1/2 cup chopped walnuts
  • 1/2 cup skim milk

Boil the potatoes in a covered pot of water with a pinch of salt for 30 to 40 minutes or until done. When done, peel the skin off the potatoes and mash them in a bowl. Add in the cinnamon, nutmeg, ginger, and butter blending it into the mashed potatoes. Then as you mash the potatoes, add in the milk a little at a time. When thoroughly mashed, add in the chopped walnuts stirring them in gently with a spoon. Once done, put the potatoes into your serving bowl.
