After thinking about various ways to share my memories, I began to write my blog, Learn from yesterday, live for today..... I started writing this blog, for the most part, to share my life experiences with family and friends, a journal of my experiences, but gradually the idea grew into sharing it with everyone. It's just about day to day living and sharing with loved ones the ordinary things that make every day memories. My blog covers everything from cooking family recipes to travel memories and more. Throughout this journey called life, each of us experience many things and what we take away from those experiences makes us who we are today. My journey has had its up and downs like so many of us and as a result, what I have learned from my experiences has shaped my perspective of life. Savory Beef Stew…A Delicious and Hearty Winter Meal!

When the temperatures are extremely cold to below zero and the wind chill is below zero as well, it’s time to make Savory Beef Stew…A Delicious and Hearty Winter Meal!

This recipe for beef stew is cooked slowly in the crock pot for six to eight hours, is definitely full of delicious flavor, and is easily one of the best meals to prepare on a cold winter’s day.

Be sure to use lean cuts of meat for a healthier beef stew because it would be a waste of all those fresh ingredients if your beef choice is not up to par. Whenever I cook a meal, I always look for the leanest meat or poultry portions I can find. Healthy living is important and quite feasible, if you are willing to look for leaner meat choices.

Savory Beef Stew…A Delicious and Hearty Winter Meal!

3 to 4 pounds of cubed Angus beef
2 tablespoons flour
2 tablespoons extra virgin olive oil
3 to 4 cups peeled carrots quartered
3 to 4 cups peeled potatoes cubed
2 medium onions sliced
3 to 4 garlic cloves chopped
2 bay leaves
1 tablespoon sugar
1 teaspoon paprika
2 teaspoons dried basil
1 teaspoon dried thyme
1 15 ounce can crushed tomatoes
1 and 1/2 cups vegetable broth
2 tablespoons Worcestershire sauce

Clean and cut the vegetables and layer them on the bottom of your crock pot as follows: carrots, potatoes, onions, and finally, the garlic on top. Then sprinkle over the top of this with the sugar, paprika, basil, thyme, and last of all, put the two bay leaves on top.

Heat the olive oil in a pan on the stove. Now put half the beef in a plastic bag and half the flour with it. Shake the bag coating well all the beef with flour. Add in the last of the beef and flour, and then shake the bag again mixing it until all the beef is evenly coated.  When done, put the beef in the pan with the heated oil and turn the beef cubes until evenly browned. You are not cooking the beef, but simply browning it. Drain off excess fat and oil as you transfer the beef to the crock pot with a slotted spoon.

Blend together the crushed tomatoes, vegetable broth, and the Worcestershire sauce. Pour this mixture over the top of everything. Then cover your crock pot and set it to 6 to 8 hours to cook.

The wonderful aromas in your home from the hours of slowly cooking will have everyone ready to eat. This beef stew goes well with a crusty loaf of rosemary olive bread and a glass of red wine. Everything you need is in the beef stew itself, meat and vegetables. We love this beef stew and look forward to this delicious and hearty meal, especially on those cold winter days. If we have enough leftovers, we like to freeze what’s left for another meal or simply reheat it the next day. The amount of ingredients we used in this recipe makes enough to serve 6 to 8 people easily depending on the type of eaters at your table. This recipe makes two servings at 157 calories each, 6 grams of fiber, and only natural sugars from the fruits used to make it. There is no added sugar or honey because you don’t need it to sweeten the flavor. It’s sweetened naturally and in this case, nature does it best. Even your youngest eater will love this tasty smoothie that is more like a treat than anything and better yet, he or she will never know they are having spinach at the same time!

I love smoothies for an uplifting mid-day treat because it feels like I’m cheating, but I’m not! In fact, I’m giving myself an energy boost before or after working out and loving it. We all need the nutrients and fiber found in this smoothie, such as the protein, as well as the Vitamin A, C, B-6, E, K, magnesium, potassium, calcium, iron, and more in this smoothie. Being healthy is important, but this smoothie makes it delicious and refreshing, also.

1/2 cup pure orange juice with lots of pulp or fresh squeezed
2 cups packed baby spinach leaves
1 cored Granny Smith apple with skin

Clean and/or cut up the fruit and vegetables listed above. Put them into your blender. Once ready, blend all of this together on medium to high depending on your blender until smooth and totally blended. It’s that easy! Pour into two glasses and serve.

Lobster Me…Eating Well on the Run in Las Vegas!

In the Miracle Mile Shops at Planet Hollywood Resort & Casino in Las Vegas, there is a unique mall restaurant at which to eat well. Lobster Me is definitely eating well on the run in Las Vegas!

This open style restaurant serves an original “Maine style” lobster roll sandwiches that are really quite good, as well as delicious bowls of New England clam chowder. They have a variety of lobster style sandwiches and salads, but the regular “Maine style” style lobster roll has plenty of lobster seasoned well with a light touch of mayo, lemon, and their own secret spice blend served on a toasted roll you would expect on a “Maine style” lobster roll. This sandwich is full of flavor and for those in the know when it comes to a “Maine style” lobster roll, this sandwich is definitely a competitor.

You can find Lobster Mac and Cheese, Lobster Grilled Cheese, or even a Lobsicle, lobster tail on a stick! There are various selections featuring lobster, but in my opinion, why mess with success. Although this sandwich is not the famous New England giant lobster roll served at The Black Cat Tavern in Hyannis, Massachusetts, on Cape Cod, it tastes delicious. The amount of lobster on The Black Cat Tavern lobster roll is more than I’ve ever seen anywhere else, but the Lobster Me original “Maine style” style lobster roll has more than enough lobster and more than one might expect for an open mall restaurant option. The seasoning is perfect and the light touch of mayo  and lemon is just that…light and just enough. The lobster rolls come in two sizes, regular and large, and the price although more than most mall restaurant sandwiches is still less than what you would pay in most places that serve a good lobster roll sandwich.

While enjoying a quick bite at Lobster Me, I had a chance to talk to the manager there and found out that the owner of this unique gem will  be opening another Lobster Me in the spring of this year in the Grand Canal Shoppes at The Venetian. This mall restaurant enterprise has been such a successful business venture that expanding and adding this second Lobster Me is the natural next step. On top of that, the Las Vegas Valley area has a Lobster Me Truck selling throughout the area. I wouldn’t be surprised if we saw more and more Lobster Me mall restaurants opening in the future.

I have to say, if you’re going to Las Vegas any time soon, and you enjoy a good lobster roll, you should stop and try the fare at Lobster Me for a quick bite at least once while visiting. You won’t be disappointed. In fact, quite the opposite will be true…you will be pleasantly surprised. Lobster Me is eating well on the run in Las Vegas for sure! Enjoy!
