About Jodee

After thinking about various ways to share my memories, I began to write my blog, Learn from yesterday, live for today..... I started writing this blog, for the most part, to share my life experiences with family and friends, a journal of my experiences, but gradually the idea grew into sharing it with everyone. It's just about day to day living and sharing with loved ones the ordinary things that make every day memories. My blog covers everything from cooking family recipes to travel memories and more. Throughout this journey called life, each of us experience many things and what we take away from those experiences makes us who we are today. My journey has had its up and downs like so many of us and as a result, what I have learned from my experiences has shaped my perspective of life. I invite you to take a look and see what I have shared so far. Hopefully, you will enjoy the experience and share this new adventure with me! Jodee

Delicious Homemade Honey Mustard Vinaigrette

By Jodee Weiland

A while back I did a Prosciutto, Cantaloupe, and Veggie Wrap with Honey Mustard Vinaigrette. I received a lot of positive feedback on this wrap, but one thing stood out for sure. People I know told me how much they enjoyed my Homemade Honey Mustard Vinaigrette. As a result, I felt I should post the recipe for my vinaigrette separately, in order to make it easier for friends and family to find. This recipe for Honey Mustard Vinaigrette really is delicious, whether used on a salad, a sandwich, or a wrap, and has become a family favorite!

One of the reasons, I love this dressing is because I made it with extra virgin olive oil. Most people know how healthy olive oil is, but some people are unaware that when you refrigerate it, it will solidify. When you refrigerate this salad dressing, it will solidify, but if you set it out on the counter for a brief period of time before using it, all you will need to do is to shake it up, and it will be ready to use. Using olive oil makes this dressing so much healthier, and I love healthy!

Delicious Homemade Honey Mustard Vinaigrette

1/2 cup apple cider vinegar
1 cup extra virgin olive oil
1 tablespoon Dijon mustard
2 tablespoons organic honey
5 drops hot sauce
1 teaspoon minced garlic
1/2 teaspoon ground black pepper
Sea salt to taste

For the vinaigrette, put all the ingredients in a bowl and mix together thoroughly with a whisk or handheld blender. Then put it in a container for dressing that will make it easier to drizzle on to your food or spoon it on carefully.

My Honey Mustard Vinaigrette is so delicious and full of flavor. This vinaigrette will make any salad, sandwich, or wrap tastier and more enjoyable than any store bought dressings. Fresh and homemade is always the best, and this is so easy to do, you’ll wish you had done it sooner. That’s the way I felt after I made my own dressing for the first time. I’m sure you will, too, so enjoy!

Tasty Guacamole with Sweet Chili Pita Chips

By Jodee Weiland

I love guacamole ever since we spent some time in Puerto Vallarta, Mexico. While there we had some of the best guacamole I had ever tasted. It was absolutely delicious and so tasty! I have tried to recreate this guacamole ever since that time, and I finally think I have succeeded with my Tasty Guacamole with Sweet Chili Pita Chips. The pita chips are something I found here in local stores, but the guacamole is my own adaptation of all the different recipes I have tried.

https://learnfromyesterday.com I start with the typical ripe avocados, cilantro, fresh lime juice, and onion. For me, it only seemed appropriate that I use a red onion. I then added jalapeno, which some recipes have and which I felt was a necessity in order to do this right. I added my favorites, minced garlic and Roma tomato. I then added ground black pepper and a little sea salt to complete my Tasty Guacamole with Sweet Chili Pita Chips. The Sweet Chile Pita Chips came about when I purchased a package for hummus a while back and everyone here loved the chips.

4 ripe avocados
2 limes, juiced
1 Roma tomato diced
1/2 cup red onion diced
1/2 cup cilantro chopped
1 jalapeno with seeds removed and diced (for more heat add 2 jalapenos)
1 teaspoon garlic minced
1 teaspoon ground black pepper Sea salt to taste

Cut the ripe avocados in half, remove stone, and scoop out the flesh with a spoon. Cut the flesh of the avocados into pieces and add the juice of two limes. Add to this the Roma tomato, red onions, cilantro, jalapeno, garlic, and black pepper. Add sea salt to taste and mix up thoroughly with a spoon. Once done, you are ready to serve. Serve with pita chips or chips of your choice.

https://learnfromyesterday.com My Tasty Guacamole with Sweet Chili Pita Chips is not only delicious, it is healthy as well. The flavors of the fresh ingredients used to make this guacamole blend together to give it a rich flavor and taste. Adding the Sweet Chili Pita Chips was a personal preference for my family and myself, but you can use any chips you prefer. Whichever chips you decide on, when you taste this guacamole, enjoy!

Homemade Apple Cider Beer Batter Bread

By Jodee Weiland

Homemade beer batter bread is so easy and quick to make, it’s almost like making it from the box. While the box recipes simply add a bottle of beer and stir lightly, homemade beer batter bread recipes use anywhere from three to five ingredients depending on the recipe you choose to follow. I looked over dozens and tried a few in the past. None of them are really all that different from each other, but a couple of things stood out for me. So what I’m giving you here is my idea of what makes the best beer batter for what I call Homemade Apple Cider Beer Batter Bread. For me the difference is in the brown sugar and the apple cider beer.

https://learnfromyesterday.com

Some recipes merely use flour, beer, and sugar. Others use the same with brown sugar in place of regular sugar. I prefer the brown sugar and the flavor it adds to the bread. Still other recipes will go on to add baking powder and salt. Although I’m not a big fan of salt, it’s really so little, it barely makes a difference. The salt is used because of the baking powder, and together it will help the bread raise more. I like that idea, so I use these two ingredients as well. The last thing I changed was the beer to apple cider beer. I wanted bread with a touch more sweetness. These five ingredients come together to make an easy and delicious Homemade Apple Cider Beer Batter Bread!

https://learnfromyesterday.com Homemade Apple Cider Beer Batter Bread

3 cups all-purpose flour
4 tablespoons light brown sugar
1 tablespoon baking powder
1 teaspoon salt
1-12 ounce apple cider beer at room temperature
Unsalted butter to grease the loaf pan

Preheat oven to 375 degrees. Prepare a loaf pan by greasing it lightly with unsalted butter. Then mix all of the dry ingredients together in a bowl. Once blended together, add the bottle of apple cider beer. As you pour it into the dry ingredients, it will foam. Stir together for lightly, about 20 to 25 strokes. It will still be lumpy when you spoon it into your loaf pan.

Bake at 375 degrees for thirty to forty minutes. Test readiness by putting a toothpick in the center and pulling it out. If the toothpick comes out of the bread clean, the bread is ready.

My Homemade Apple Cider Beer Batter Bread is delicious and goes well with just about any dish or just by itself with a little butter. It would be delicious with soups, stews, salads, and along with a meat dish and vegetables. But with its slight touch of sweetness, a slice of this bread with some butter is great, especially when it’s warm from the oven. So however you decide to have this bread, always enjoy!
