After thinking about various ways to share my memories, I began to write my blog, Learn from yesterday, live for today..... I started writing this blog, for the most part, to share my life experiences with family and friends, a journal of my experiences, but gradually the idea grew into sharing it with everyone. It's just about day to day living and sharing with loved ones the ordinary things that make every day memories. My blog covers everything from cooking family recipes to travel memories and more. Throughout this journey called life, each of us experience many things and what we take away from those experiences makes us who we are today. My journey has had its up and downs like so many of us and as a result, what I have learned from my experiences has shaped my perspective of life. Delicious Blackened Tilapia Fish Tacos

When I first heard about fish tacos, I wasn’t sure I would like them, but I was wrong. I decided to try fish tacos when we went out to dinner one day, and to my surprise, I loved them! That’s when I started thinking about making my own and making them even tastier than those I had when we ate out. My Delicious Blackened Tilapia Fish Tacos turned out even better than I thought they would!

https://learnfromyesterday.comThe fish tacos I had out used a white fish and served it with a little cabbage sprinkled on it. I chose to create my own vinegar and olive oil based cole slaw to top off my fish taco. I also chose to use a blackened tilapia for the fish using my favorite blackened seasoning. There was no need to recreate there, what has already been done well. On top of my cole slaw topping, I wanted a homemade fresh pico de gallo. Top all of that off with some sliced jalapenos and voila, you have my recipe for Delicious Blackened Tilapia Fish Tacos!

3 to 4 four ounce tilapia fillets halved
Zatarain’s blackened seasoning
Extra virgin olive oil in a Misto spray bottle or just use as needed
6 inch flour tortillas (however many you need)
Light and Easy Honey Lime Cole Slaw
Fresh Homemade Pico de Gallo
Jalapenos sliced thinly

Rinse your fish fillets. Prepare your skillet with olive oil and put the fillets in the pan. You can halve them before they cook or after, whichever is easier for you. Season the fillet tops with the seasoning and cook for several minutes. Then flip the fillet pieces over and season them again, continuing to cook until done. The cooking time may be a little longer for the thicker halves. Remove the thinner halves when done cooking and finish cooking the thicker halves. Make sure to keep adding oil while cooking in a light spray so the fish will not stick.

https://learnfromyesterday.comOnce done, serve the Delicious Blackened Tilapia Fish Tacos by putting the fish in a tortilla, then top the fish with Light and Easy Honey Lime Cole Slaw and finally, Fresh Homemade Pico de Gallo. If desired, put slices of jalapenos on the very top for additional flavor. This meal is delicious and full of flavor. Serve it with Sangria or a Margarita, and let the meal begin! Fresh Homemade Pico de Gallo

Whenever we go out to a Mexican restaurant, I always look forward to freshly made pico de gallo and guacamole. I can’t help it. I love both! So I decided it was time to make some Fresh Homemade Pico de Gallo to have here at home with some chips and a glass of Sangria. Pico de gallo and some of my homemade tasty guacamole with some chips is always a welcomed treat in our family!

At this time of year, it is a great time for freshly grown tomatoes. Fresh tomatoes, some onion, cilantro, a jalapeno, and some fresh lime juice are the basic ingredients to any good pico de gallo. In my mind, the simplest ingredients create the greatest taste experiences. That’s true when making delicious Fresh Homemade Pico de Gallo!

Fresh Homemade Pico de Gallo

3 medium fresh tomatoes with seeds removed and diced
1/2 white onion chopped (more if desired)
1 fresh jalapeno with seeds removed and finely diced (use 2 jalapenos if desired)
1/4 cup fresh cilantro finely chopped
1 fresh lime juiced
Sea salt to taste

Prepare and cut up the tomatoes, onion, jalapeno, and cilantro. Mix together in a bowl. Pour the fresh lime juice over all of this and mix together. Add sea salt to the pico de gallo to taste.

Light and Easy Honey Lime Cole Slaw

I love the idea of cole slaw, but I’m not a big fan of using mayonnaise. I prefer a healthier version of cole slaw with great flavor that will make it more than just a side dish. I want it to delight my taste buds. Believe me when I say, this Light and Easy Honey Lime Cole Slaw will make even the most doubtful cole slaw eater a believer. It’s full of flavor that will keep you heart healthy and happy!

Don’t get me wrong, there are times when I will use mayo, but this is just not one of those times. In my cole slaw, I prefer a vinegar base with extra virgin olive oil, but to add sweetness and some zest, I add honey and fresh lime juice. It definitely isn’t rocket science, but  it definitely is delicious! Use it as a side dish, on fish tacos, on pulled pork sandwiches, or any number of ways.

Light and Easy Honey Lime Cole Slaw

3 cups shredded cabbage and carrot mixture
1/2 cup red cabbage shredded
1/8 cup apple cider vinegar
1/4 cup extra virgin olive oil
1 fresh lime juiced
2 teaspoons organic honey (or more to taste)
Sea salt and ground black pepper to taste

Mix together the together the cabbage and carrot mixture with the red cabbage. Add the vinegar, olive oil, lime juice, and honey. Finally, carefully season your cole slaw to taste with sea salt and ground black pepper.
