After thinking about various ways to share my memories, I began to write my blog, Learn from yesterday, live for today..... I started writing this blog, for the most part, to share my life experiences with family and friends, a journal of my experiences, but gradually the idea grew into sharing it with everyone. It's just about day to day living and sharing with loved ones the ordinary things that make every day memories. My blog covers everything from cooking family recipes to travel memories and more. Throughout this journey called life, each of us experience many things and what we take away from those experiences makes us who we are today. My journey has had its up and downs like so many of us and as a result, what I have learned from my experiences has shaped my perspective of life. Peach Cucumber Salsa with Grilled Chicken

I’ve been reading a lot lately about various fruit salsas served over grilled meats and fish. Since I had some peaches available and English cucumbers, I decided I would go ahead and see what kind of fruit salsa I could come up with for grilled chicken. We grill chicken a lot and a fruit salsa sounded like a good way to change it up a bit. That’s how I came up with my Peach Cucumber Salsa with Grilled Chicken, and we loved it!

The idea behind a fruit salsa is of course, a fruit blended with either other fruits and/or vegetables of one kind or another. Add to this a vinaigrette of sorts, and you should have the makings of a fruit salsa that can be used as a topping on a grilled meat, such as chicken, or a grilled fish. That is just what I did to come up with my Peach Cucumber Salsa with Grilled Chicken, and it was delicious!

1 peach diced
1/2 long English cucumber diced
2 tablespoons green onions sliced
1 tablespoon extra-virgin olive oil
1 tablespoon pure organic honey
2 tablespoons apple cider vinegar
Grilled chicken breasts (or another meat or fish)

Take all the above ingredients, except for the grilled chicken, of course, and mix together. Let stand for a while, so the flavors can blend together. When your grilled chicken is done, plate it and spoon the Peach Cucumber Salsa over the top of the chicken. Serve with side dishes of your choice. I chose my Grilled Zucchini.

My Peach Cucumber Salsa with Grilled Chicken is both delicious and healthy! This meal makes a great summer through fall meal, but can be served any time of the year. The rich flavors of the fruit with the vegetables make this topping for grilled meats or fish not only healthy, but delicious and refreshing as well. Serve with a side vegetable, like my Grilled Zucchini, and a glass of white wine. Give this Peach Cucumber Salsa a try as a topping for grilled chicken or whatever other meat or fish you choose, and enjoy!

Delicious Baked Oatmeal with Peaches

Family members having been asking for a fast breakfast idea lately and although baked oatmeal is not fast, it can be done ahead and reheated later when you’re ready to eat. Just reheat a square of baked oatmeal in a matter of seconds in the microwave in the morning. Add some fresh fruit to go along with that and baked oatmeal makes a great way to start your day with very little effort. My Delicious Baked Oatmeal with Peaches is healthy as well as a great tasting way to start your day!

https://learnfromyesterday.comIn order to keep my recipe as healthy as possible, I used Old Fashioned Quaker Oats and added fresh peaches, almond milk, honey, cinnamon, vanilla, egg whites, and organic honey. To this I added some baking powder and a small amount of sea salt. Once baked, these ingredients created a baked oatmeal that tasted just sweet enough and allowed the sweetness of the peaches in the recipe to give this dish its unique flavor. If more sweetness is desired, serving the baked oatmeal with fresh sliced peaches on the side will add still more natural sweetness.

Delicious Baked Oatmeal with Peaches

4 cups Quaker Old Fashioned Oats
2 teaspoons cinnamon
2 teaspoons baking powder
1/2 teaspoon sea salt
2 cups almond milk
1 and 1/2 tablespoons pure vanilla
4 egg whites
4 tablespoons organic honey
3 large peaches peeled, pit removed, and diced

Preheat the oven to 375 degrees. Use olive oil to coat and prepare a 13” x 9” baking dish. Mix together the oats, cinnamon, baking powder, and sea salt. In another bowl, mix together with a whisk the almond milk, vanilla, egg whites, and organic honey. Blend this mixture into the dry ingredients. Then add in the peaches to this mixture and stir them in carefully. Once done, pour and spread the oatmeal mixture evenly into the prepared baking dish. Place the baking dish on a rack that is centered in the oven and puts the baking dish in the upper half of the oven. Bake at 375 degrees for 45 minutes. When done, allow the baking dish to sit for about 10 minutes before cutting the baked oats in squares to serve or simply spoon out a serving.

My Delicious Baked Oatmeal with Peaches tastes wonderful and when served with freshly sliced peaches, it is beyond delicious! This breakfast recipe is so good, and best of all, you can bake it ahead, cover it, refrigerate it, and then later reheat it. It’s healthy while being delicious tasting, so you may want it for more than just breakfast. Topped with vanilla ice cream and freshly sliced peaches, this would make a great dessert as well. However you decide to eat this baked oatmeal, you will love it, so enjoy!

 

 

Delicious Homemade Hot Hot Hot Sauce

In our home, we love hot sauce and spicy recipes! When I was growing up in our Italian household, it was not unusual to see my father or mother putting hot sauce or hot peppers on a wide variety of foods. The hotter the sauce the better sauce was my father’s opinion. So I guess my love of spicy food comes to me naturally. Adding hot peppers or hot sauce to a dish, almost always makes a meal taste better for me. That’s why I decided to make my own Delicious Homemade Hot Hot Hot Sauce!

Our jalapeno peppers have been growing strong in our garden this year. We also grew some dragon cayenne peppers this year. The dragon cayenne peppers have a good amount of heat, so we love them. When I decided to make my own sauce, I decided to put some of our abundant Roma tomatoes to use as well. You might say our garden determined the direction of this hot sauce because it did. The result was a great hot sauce with a good kick to it, and we loved it!

Delicious Homemade Hot Hot Hot Sauce

1 tablespoon extra-virgin olive oil
2 large cloves garlic finely chopped
1/4 cup onion chopped
9 jalapenos sliced
6 Roma tomatoes cut up
1/4 teaspoon sea salt
1 cup filtered water
1 dragon cayenne pepper sliced (optional)
1/2 cup apple cider vinegar

Sauté the garlic, onion, jalapenos, tomatoes, and salt in olive oil for about five minutes. Then add the water and dragon cayenne pepper. Bring this to a low boil over a medium heat. Lower heat and simmer this mixture for about twenty minutes stirring it frequently. It will thicken.

Once it is done, spoon the mixture into a food processor or blender. Gradually adding the apple cider vinegar, blend until smooth. When ready pour the hot sauce into a container. This hot sauce can be refrigerated in a closed glass container for up to six months. Ours is usually gone long before six months.

My Delicious Homemade Hot Hot Hot Sauce is thick and spicy! I like my hot sauce to have a thicker consistency, so I only add 1 cup of water, but if you like your sauce thinner, just increase the amount of water in the recipe. The dragon cayenne pepper will kick up the heat level, so if you prefer, you may leave it out of the recipe. Either way, the rich flavor of tomato adds something to the sauce, and if you love hot sauce, you will love this sauce. Give it a try, and enjoy!
