Egg White Spinach Mushroom Omelet with Mozzarella

By Jodee Weiland

The great thing about an omelet is that you can have them for breakfast, but you can even have them for dinner or any other meal.

https://learnfromyesterday.comMost people prefer omelets for breakfast, but done right, an omelet can just as easily be any other meal. The main reason for that is the fact that they usually have vegetables with eggs or egg whites. They may also have meat in the omelet or a meat serving on the side for those who want it. Omelets vary according to personal preferences or tastes.  There are very few rules when making an omelet, if any, other than including eggs. But hey, who knows? There may be an egg-less omelet out there somewhere. These days, anything is possible!

This Egg White Spinach Mushroom Omelet with Mozzarella is simple and healthy. It has egg whites, mushrooms, spinach, and shredded mozzarella cheese with a little olive oil. There’s nothing complicated here because it consists of four main ingredients. For extra flavor, you could add chopped onions that you would sauté with the mushrooms in olive oil slightly before adding the egg, but if you want it simple and quick, just add the four main ingredients with a little olive oil. Another thing you could do is to add cut up prosciutto or ham if you want. In fact, you could add any meat you prefer. For us, this omelet was delicious just as it is described here. I love to overload the vegetables, so be ready. It’s the New Year and once again, healthy habits are at the top of our list. We have them already, but we want to keep them so we can maintain good health throughout the coming year.

In your omelet pan, lightly sauté the mushrooms for a few minutes or until ready. Pour the egg whites in over that and let this cook over a medium heat. When ready, sprinkle the shredded mozzarella over this. Finally, add the baby spinach to the top of the omelet. Cover and let cook until slightly wilted.  When ready, fold the omelet over to create a half circle. Either flip the half circle over to cook a minute or two longer or cut in half to flip and finish cooking.

Once done, the Egg White Spinach Mushroom Omelet with Mozzarella is ready to serve. This delicious omelet is easy to make and has great flavor. Serve with freshly brewed coffee, sliced apples or some other fruit cut up, and a multigrain toast for a healthy meal. Omelets aren’t difficult to make. They really are just a matter of imagination and taste. So enjoy!

Aunt Rose’s Eye of Round Roast Italian Style

By Jodee Weiland

Aunt Rose, who taught me how to make eye of round roast Italian style, was my mother’s sister, and she lived in the house next to my parent’s home, the home I grew up in from the time I was two until I moved away to a place of my own.

https://learnfromyesterday.com

She was always more than just an aunt. She was more like another mother figure in my life because she lived next door to us, and she was very close to my sisters and me. Aunt Rose had no children of her own, but she treated us like we were her children and was always there for us. So way back when I first started cooking, I was at my Aunt Rose’s house, and she was cooking a beef roast that smelled so delicious I had to ask how she did it.

https://learnfromyesterday.com

When I asked her how she cooked her roast, she told me. Basically, Aunt Rose’s Eye of Round Roast Italian Style is the recipe she gave me that day without the measurements. What can I say? Italians just cook and put things in as they go. Who measures? At any rate, I took down her directions and have been cooking my beef roasts this way now for years, with a few small adaptations along the way,…also, another Italian trait, at least in my family. Over the years, I added the carrots and onions under my roast and the Worcestershire Sauce. I, also, learned to brown my roast before cooking it in the oven. These were my additions and have worked out well for me. Aunt Rose liked them enough to add them to her recipe after I told her what I had done. So here is Aunt Rose’s Eye of Round Roast Italian Style as it is today!

Spray the baking dish you will use with olive oil.  Preheat the oven to 350 degrees. If your roast has excess fat, trim it off. Then season the roast lightly with black pepper and sea salt lightly. Heat the olive oil in a pan and brown the roast lightly on all sides on your stove top. Once done, layer the bottom of your baking dish with the carrots and onions. Put the browned roast on top of these vegetables and then add the basil, parsley, chopped garlic, onion powder, and black pepper. Lastly, drizzle the Worcestershire sauce over the roast. Cover the baking dish and cook in the oven for about one hour. Uncover after one hour and cook for ten minutes longer. Remove from oven and slice the roast. Put the roast back in the baking dish with juices and cook for another few minutes or until cooked to your taste, whichever that may be, rare to well done.

Once done, Aunt Rose’s Eye of Round Roast Italian Style is delicious. Aromatic while cooking and full of flavor when done, serve with the carrots and onions under your roast. This is a meal all in one pot, but you can add a salad if you like or a loaf of bread. We like it with the carrots and onions and a glass of Merlot. If you try this meal, you will love it for sure.  It is definitely a crowd pleaser, so enjoy!

Ways to Workout at Home Easily and Stay Healthy!

By Jodee Weiland

Working out to stay healthy is a way of life for me, and it can be for you, too. There are so many Ways to Workout at Home Easily and Stay Healthy!

Working out 2 001 (500x375)

That said, my one word of caution to any of you would be to consult with your doctor before starting any workout routine, especially if you have never worked out before or have had health problems. I’m not a fitness trainer or expert, but I know what works for me and what doesn’t because I have been working out at least three to five times a week for most of my adult life. Lately, I work out daily. With age comes certain advantages making that easier to do. For one thing the children are grown up and on their own. And for another thing, I’m now retired after years of teaching. Both factors make it easier to workout daily and feel great!

Nonetheless, even if you have children at home or work, you can still workout three to five times a week or even more, if you choose to do so. It doesn’t have to cost a fortune to do so either. When my children were young, I used a number of ways to workout and be at home with them. Later when I returned to the work, I continued to workout at home on weekends and evenings. One inexpensive way I chose to workout was to use DVD’s or video tapes years ago. There are fitness experts by the dozens out there making work out DVD’s for you to be able to use in your own homes. You can choose DVD’s for walking workouts, yoga, dance, and more. Choose DVD’s anywhere from beginners to advanced levels of difficulty. You just have to decide which of these will work for you!

One of my favorites, and definitely one that just about anyone can use, is the Leslie Sansone’s Walk at Home series. Leslie Sansone has DVD’s for people at all levels of fitness, and she makes working out fun and easy using her four basic steps. I’ve used many of her tapes for years, even while I was travelling. It’s so easy to carry a DVD with you when you travel and play it on a lap top or hotel/condo DVD player. You can even use her walk boosters, from resistance bands to handheld weights and more, to intensify your workout. Order online or shop at stores, you will find such a wide variety of tapes, you’ll be able to change up your workout often. As Leslie says often on her tapes, you need to change it up a little so that the muscles will work harder, and she’s right!

Another way I change it up is to use my exercise mini trampoline (see my earlier post for more information), which I use just about every day because I love it so much. You can purchase one inexpensively at a sporting goods store, a warehouse store, or even a retail store, or you can pay more money for an expensive brand, if you really want to do so. Years ago, I was looking for an alternative to a treadmill and found a Rebounder Mini Trampoline. At first I thought it was some sort of toy, but on closer inspection, I realized it was an inexpensive, easy to use, and easy to store piece of workout equipment. At the time, the price was about twenty-five dollars and much easier to afford than a treadmill, so I thought to myself, “Why not?” I decided to give it a try, and that has been a decision I have never regretted to this day.

I’ve replaced it several times over the years from wear and tear. My latest one cost me fifty dollars plus tax at a sporting goods store. I jog in place on my mini trampoline at least an hour a day, but more often than not I will jog longer or sometimes even more than once a day. This inexpensive piece of equipment works no matter what the weather is outside, and I can do it while I watch the news or whatever else is on the television. I love it, and even though I have a workout room in my home with a treadmill and an elliptical, as well as weight training equipment, plus more, I still use my mini jogger every day! I use the other equipment as well, but not as frequently because this is easier to fit in to my schedule no matter what’s going on during the day.

There are so many Ways to Workout at Home Easily and Stay Healthy! Whatever you decide to do to keep fit and healthy, you won’t regret the choice because in the long run you will feel and look better as a result. Keep in mind that it is important to eat well if you want to lose weight or maintain weight and stay healthy. Working out should never be an excuse for poor eating habits. I use a Mediterranean diet for the most part. It’s what I grew up with in my childhood home, and it’s delicious as well. It’s also a healthy way to eat according to most doctors, but that doesn’t mean you can eat unlimited amounts of pasta.

https://learnfromyesterday.com

When you eat, eat to live as the saying goes. Don’t live to eat! Moderation is a good rule of thumb. Sometimes we eat fast and feel overstuffed afterwards. That’s because when you eat, it takes time for your stomach to register fullness. Pace yourself and enjoy your meal while you enjoy those you’re sharing your meal with or that wonderful book you’re reading. Eat right and make eating healthy a habit and a way of life, not a diet. Be sure to check out some of my recipes. Once you do, find ways to workout that are right for you and stay healthy by eating right as well! Enjoy life!
