After thinking about various ways to share my memories, I began to write my blog, Learn from yesterday, live for today..... I started writing this blog, for the most part, to share my life experiences with family and friends, a journal of my experiences, but gradually the idea grew into sharing it with everyone. It's just about day to day living and sharing with loved ones the ordinary things that make every day memories. My blog covers everything from cooking family recipes to travel memories and more. Throughout this journey called life, each of us experience many things and what we take away from those experiences makes us who we are today. My journey has had its up and downs like so many of us and as a result, what I have learned from my experiences has shaped my perspective of life. Scrumptious Strawberry Banana Nonfat Frozen Yogurt

In getting ready for summer, I’ve been playing around with different ideas for frozen yogurt. Today I decided to try Scrumptious Strawberry Banana Nonfat Frozen Yogurt. I love strawberry banana yogurt, so why not strawberry banana frozen yogurt. I knew it would probably need some extra sugar, but not that much more. When all was said and done, my Scrumptious Strawberry Banana Nonfat Frozen Yogurt turned out delicious and refreshing!

https://learnfromyesterday.comIn this recipe I added just a little more sugar, since I thought the addition of banana might need it. I think the adjustment was well worth it. The flavor is smooth and fresh, while being just sweet enough to satisfy anyone. I have a little less vanilla extract, but just enough to add some flavor to the plain yogurt. All in all, it turned out wonderful and tasted delicious!

Scrumptious Strawberry Banana Nonfat Frozen Yogurt

2 cups nonfat Greek yogurt
1/2 cup sugar (or the appropriate equivalent of non-sugar sweetener)
1 and 1/2 teaspoons pure vanilla extract
1/2 cup skim milk
2 cup fresh strawberries frozen lightly and pureed
1 fresh banana pureed (with the strawberries)
Miniature dark chocolate chips or fresh strawberries to sprinkle on top (optional)

Puree the strawberries and banana in a blender. Then blend together the yogurt, sugar, vanilla, and skim milk in a mixing bowl with a hand mixer on medium speed until the sugar is dissolved, about one to two minutes. Once done, blend the strawberry banana puree into the yogurt mixture with the hand mixer on low for about one minute. Following the directions of your yogurt/ice cream maker, turn it on and slowly pour in the blended yogurt and berry mixture. Once it is all in the yogurt maker, let the mixture thicken into your creamy yogurt as the machine works its magic, usually about thirty minutes. When ready, scoop the frozen yogurt into serving dishes, putting any leftover frozen yogurt into a freezer storage container and freeze for later.

My Scrumptious Strawberry Banana Nonfat Frozen Yogurt is a delicious and refreshing treat for those warm days ahead. You are going to love the fresh fruit flavor from making homemade frozen yogurt using all fresh fruit. Serve it with dark chocolate mini chips or whatever you prefer. Topping it off with fresh strawberries is another great choice. However you decide to eat your frozen yogurt, be sure to enjoy!

Delicious Chicken Sausage, Broccoli, and Mozzarella Frittata

Lately, when I have leftovers and extra vegetables available, I immediately think of a frittata. It may just be that I’m on a kick lately when it comes to frittatas, but if so, it has worked out well for my family and me. This time I had some leftover Italian chicken sausage that we had grilled the night before and some fresh broccoli I needed to use, so of course, it was time for what came to be known as my Delicious Chicken Sausage, Broccoli, and Mozzarella Frittata!

Originally, frittata was an Italian term used for cooking eggs in a skillet. A frittata is basically just an Italian version of an open-faced omelet that is started on the stove top and then finally baked in the oven.  Some people will cook a frittata completely on the stove top, while others will vary between how much is done on the stove top and how much is done in the oven. For my frittata, I used the oven this time. When you cook a frittata in the oven, be sure to use an oven proof skillet or baking dish.

My Delicious Chicken Sausage, Broccoli, and Mozzarella Frittata came together because I had the leftover Italian chicken sausage and some fresh broccoli I wanted to use. To this I added all natural egg whites, reduced fat shredded mozzarella, sun dried tomatoes, and garlic. Any time you put broccoli together with garlic, you have a winning combination of flavor. Add the rest of the ingredients here, and you have a winning frittata that is healthy and full of delicious flavor!

Delicious Chicken Sausage, Broccoli, and Mozzarella Frittata

1 and 3/4 to 2 cups all natural egg whites
2 cups fresh broccoli florets cut up into small pieces
2 cooked Italian chicken sausages diced into small pieces
2 garlic cloves minced
1 tablespoon sun dried tomatoes chopped
1 cup reduced fat shredded mozzarella

Extra virgin olive oil as needed
Sea salt and ground black pepper to taste when served

Preheat oven to 350 degrees and prepare the baking dish with olive oil as needed. My dish is about 8 x 11 inches, so my frittata is about 1/2 to 3/4 inch deep. Cut up and prepare the various ingredients as needed. When ready, mix together the all natural egg whites, broccoli, chicken sausage, garlic, and sun-dried tomatoes in a bowl. Finally, add in the mozzarella cheese and stir some more.

When the mixture is ready, pour it into the prepared baking dish. Place the dish in the oven and bake at 350 degrees for 30 minutes. When done, put a toothpick in the center and pull it out. If the toothpick comes out clean, then your frittata is cooked and ready to cut and serve.

My Delicious Chicken Sausage, Broccoli, and Mozzarella Frittata is both healthy and delicious! Serve with crusty multigrain bread toasted and some fresh fruit. This dish is not only delicious, but satisfying as well. The recipe, when cut into four squares makes four servings that are about 325 calories per serving. You can easily have it for breakfast, lunch, or dinner. Whatever you decide, I know you are going to love this frittata, so enjoy!

Eating Maine Lobster Rolls at Clawdaddy’s in Lexington, Kentucky!

While visiting Lexington, Kentucky, on our way home from the coast, we found great Maine lobster rolls at Clawdaddy’s. The owners fly in their lobsters from Portland, Maine, in order to make authentic style Maine lobster rolls. They proudly state right on the front page of their website, “Welcome to Clawdaddy’s…Where ‘down east’ meets ‘down south’!” The owners are very proud of the fact that they have “lobster rolls that rock!” To be honest with you, both my husband and I agree that Eating Maine Lobster Rolls at Clawdaddy’s in Lexington, Kentucky, is an awesome dining experience!

These lobster rolls are served on freshly toasted rolls and have no fillers or stretchers. The rolls are baked fresh daily. When you bite into their lobster roll, you bite into large succulent chunks of one hundred percent fresh Maine lobster. All they use on the lobster is a light swipe of mayo on the bun, a brush of melted butter, and a special spice combination. The same is true of their fresh sweet shrimp rolls, Jonah crab roll, and these same standards apply to all their other menu items. All their shellfish comes from the cold waters of coastal Maine. Believe me when I say, these lobster rolls were great!

While there, we also tried their Maine Lobster Bisque soup, and it was absolutely delicious. Light and rich all at once, this soup was full of flavor and chunks of fresh lobster. This soup is one of my favorites now and with good reason. This soup is so tasty, you won’t want to miss a drop, not to mention it’s a great way to start a meal here for sure!

Eating Maine Lobster Rolls at Clawdaddy’s in Lexington, Kentucky, is something you will want to do if you’re in town! What a great dining experience for anyone who loves Maine shellfish, especially lobster. The prices are great for a fresh Maine lobster meal that you will enjoy and will leave you satisfied completely. Clawdaddy’s was a great find for us, and we will definitely return again when passing through Lexington on our way to the coast! If you go to Lexington, give it a try, and enjoy!
