Delicious Oven Roasted Sweet Potato Slices with Thyme

There are so many wonderful ways to cook a sweet potato, but around this time of year everyone is thinking about eating healthier. An oven roasted sweet potato is a great way to have a healthy sweet potato with your meal. These sweet potatoes are so delicious, you won’t miss the brown sugar, butter, or marshmallows at all. Sweet potatoes are definitely sweet enough on their own, so why not roast them with a few seasonings and have my Delicious Oven Roasted Sweet Potato Slices with Thyme!

http://learnfromyesterday.comIt doesn’t take much to make a delicious oven roasted sweet potato. All you need is some extra-virgin olive oil and the right seasonings. Thyme is an excellent seasoning to add flavor to a sweet potato. Add some garlic and onion powder as well, and the flavor is outstanding! Lightly use some sea salt, but ever so lightly, and ground pepper to taste, and the result is perfection!

2 to 4 sweet potatoes peeled (depending on the number of people and size of the potatoes)
Extra virgin olive oil
Garlic powder to taste (1/2 teaspoon to 1 teaspoon)
Onion powder to taste (1/2 teaspoon to 1 teaspoon)
Ground thyme to taste (1/2 teaspoon to 1 teaspoon)
Sea salt lightly and black pepper to taste

These are the basic seasonings, but you can add any other seasonings you may like. Preheat your oven to 475 degrees. Prepare your baking sheets with parchment cooking paper. Cut the each potato in  ½” slices to create your oven roasted sweet potato slices just before you are ready to cook. You may do this sooner and leave in cold water, but I prefer to do it just before baking.

Put the slices in a large bowl and pour some olive oil over the slices. Toss the slices until all of them are coated with some olive oil. They do not need to be drenched, but just coated. Once coated in olive oil, season the slices with the above seasonings to taste. It does not take much of any of the seasonings to add flavor, so add seasonings carefully. Place the slices evenly on your baking sheets. You may add any additional seasonings you may like, but if serving guests, I suggest you always ask about preferences as some people may not like or tolerate well certain seasonings. When done seasoning, place the baking sheets in the oven for about 16 to 20 minutes or until fork tender. Watch them carefully when baking so that you do not burn them.

Fresh Homemade Cranberry Sauce

If you’ve never made homemade cranberry sauce, when you decide to do so, you will be pleasantly surprised. Making homemade cranberry sauce from fresh cranberries is so easy, you’ll wonder why you never did it before. The flavor is sweet but tart and will make everything you serve with it taste so much better, because of it’s crisp rich flavor. Cranberry Sauce I used to think making cranberry sauce was a lot more complicated. Once I found out how easy it is to make, I couldn’t wait to try it. But the best part of this learning experience was the burst of rich delicious flavor in Fresh Homemade Cranberry Sauce! It’s sweet tart flavor just explodes in your mouth as you savor the flavor that only fresh cranberries can give you.   • 16 ounces fresh cranberries
  • 1 cup raspberry acai juice from Trop 50 (or any fruit juice)
  • 1 cup light brown sugar

http://learnfromyesterday.comPut all the above ingredients in a sauce pan and mix together with a spoon. Do not cover the sauce pan. Cook this mixture over a medium high heat for 15 to 20 minutes or until most of the liquid is reduced and the cranberry sauce is the desired consistency. You do not want to burn it, so stir occasionally while it is cooking. As it cooks, it will bubble and the cranberries will burst, letting their rich flavor blend into your cranberry sauce. When done, remove from the heat and let it cool down. Then serve with your meal. The cranberry sauce may be refrigerated in an airtight container for up to a week.

Healthy and Delicious All Natural Applesauce (No Sugar Added)

I love a good applesauce, whether it’s with a meal or just by itself! What I don’t like is when my applesauce has all kinds of sugars and other ingredients that are not really necessary. Apples have such great flavor on their own, so when we make applesauce, why do we think we need to add sugar. When I make apple sauce, I let the apples do the talking for me, so to speak. Making applesauce is really a very easy process, especially if you have an Apple Machine that peels and cores your apples while slicing them as well. These little machines are great for all kinds of apple recipes and cost very little. But even if you have to peel, core, and cut up the apples yourself, it isn’t all that hard. It will just take more time. Once you get this part of the process done when making applesauce, the rest is easy!

Healthy and Delicious All Natural Applesauce (No Sugar Added)

  • About 4 pounds of apples peeled, cored, and cut up or sliced
  • 1 cup water
  • 1 and 1/2 tablespoons lemon juice
  • 1 teaspoon cinnamon or more to taste

Peel, core, and cut up or slice the apples. Put the apple pieces in a large pot. Add the water, cover, and bring to a boil. When the water starts to boil, lower the heat to a simmer. Cover the pot and simmer for 10 to 20 minutes until tender, stirring occasionally. The amount of time it takes for the apples to become tender enough to puree will depend on the variety of the apple you choose and the maturity of the apples used.

When the apples are done, turn off the heat and allow them to cool slightly. Once cool enough, put them into a blender and add the cinnamon and lemon juice. Depending on your blender or food processor, you may want to do this in two batches. Blend thoroughly until smooth. When done blending, pour into containers and let cool in the refrigerator. Once cool, freeze whatever you will not be using in either plastic covered containers leaving an inch of space at the top or plastic freezer bags with the excess air squeezed out. Applesauce will freeze up to one year, but this is so good, it doesn’t usually last that long.

Healthy Parmesan Hasselback Potatoes

Some people feel that having a potato with a meal is going to cause weight gain, but the reality is that it isn’t the potato that does this. What does this is what we put on those potatoes and how much we have. One way to avoid adding the wrong things to potatoes is a healthy hasselback potato made using olive oil and seasonings that will add all the flavor you need. A hasselback potato done right needs very little salt or none at all because the flavor will come from the seasonings. And if you want a potato with some cheese flavor, have a hasselback potato sprinkled with grated Parmesan Reggiano cheese. Done this way, my Healthy Parmesan Hasselback Potatoes are both delicious and healthy!

Eaten as baked and seasoned in the recipe, these hasselback potatoes will be both delicious and healthy. It’s when people add sour cream, butter, bacon bits, some higher calorie cheeses, and more that you have problems. Hasselback potatoes done using this recipe don’t need all those additional toppings, because they will taste wonderful without them. You won’t even miss the idea of butter when you use an extra virgin olive oil, as I do in this recipe. You really don’t even need extra salt, and if you do use the sea salt, be sure to do so lightly because the Parmesan cheese has salt as well. Once you try potatoes this way, you will be a believer for sure!

Healthy Parmesan Hasselback Potatoes

  • 4 large russet potatoes or potatoes of your choice
  • 4 tablespoons extra virgin olive oil
  • Sea salt and ground black pepper to taste
  • Paprika to taste
  • Onion powder to taste
  • Garlic powder to taste
  • 4 tablespoons Parmesan Reggiano cheese grated to taste
  • 1 tablespoon finely chopped chives

Preheat the oven to 425 degrees. Wash and scrub the potato skins well with a vegetable brush. Dry the potatoes and slice them across the width 1/8″ to 1/4″, but do not cut through the potato. Stop your slice before cutting all the way through creating a sliced potato with the bottom still in one piece. Place the potatoes in a baking dish that has been sprayed lightly with olive oil. With a food brush, brush about half the olive oil over the top of the four potatoes. Lightly sprinkle the potatoes with sea salt and black pepper to taste. Bake at 425 degrees for 30 minutes.

After 30 minutes, remove the potatoes from the oven to brush them once again with the remainder of the olive oil. Sprinkle the onion powder, garlic powder, and paprika over the potatoes to taste. Remember to season lightly because a little bit goes a long way with flavor.  Bake for another 20 minutes or longer if needed to bake thoroughly.

http://learnfromyesterday.comAfter 20 minutes, check to see if the potatoes are almost done. If not, bake for 5 to 10 minutes longer. Then remove from the oven and sprinkle the potatoes with Parmesan Reggiano cheese. Put them back into the oven and finish baking for another 10 minutes longer. When done, sprinkle the tops with fresh chopped chives and serve.

My Healthy Parmesan Hasselback Potatoes are both delicious and healthy! Serve them with a few fresh chopped chives sprinkled across the top. These potatoes go well with any meat, poultry, or fish entree and another vegetable. We love them because they are very tasty and healthy at the same time. Garlic Butter Kale and Sweet Corn

Recently when I made a delicious Lime Basil Pesto Chicken for dinner, I wanted a side dish that would complement it. I had fresh kale and sweet corn to use, but rather than make one or the other, I decided to combine the kale and sweet corn in a delicious side dish cooked in my garlic butter recipe and extra virgin olive oil. As it turned out, this was the best decision I could have made. My Garlic Butter Kale and Sweet Corn was delicious!

My garlic butter recipe made with chopped fresh garlic is a perfect way to add rich flavor to vegetables. In the original recipe, I add jalapeno powder, but in this recipe I left the jalapeno powder out and simply used the whipped butter and garlic. I heated the garlic butter and extra virgin olive oil together to saute my vegetables slightly. The effect was absolutely delicious when combining these two healthy vegetables, kale and sweet corn. I usually cook fresh kale from my garden with olive oil and garlic, while corn is usually served with butter for many people, so what could be more natural than Garlic Butter Kale and Sweet Corn lightly cooked in both!

Garlic Butter Kale and Sweet Corn

2 fresh corn cobs, corn sliced off before cooking
4 cups fresh kale with stem removed (tear leaves away from the center stem)
1 tablespoon olive oil
1/4 cup garlic butter (see below)
Sea salt and fresh ground black pepper

Garlic Butter Recipe: (use extra butter for garlic bread or cut recipe in half)

6 to 8 whole garlic gloves peeled
1/2 cup unsalted whipped butter

Heat the garlic butter and olive oil in pan on the stove over a low to medium heat. Do not burn your butter or the garlic. Add the fresh kale to the pan and toss lightly in the heated mixture until slightly wilted. Carefully slice the corn off the 2 cobs and add the corn to the slightly wilted kale and toss together. Saute slightly for a few minutes until the corn is cooked but not overcooked. Serve with any main course as a side dish.

My Garlic Butter Kale and Sweet Corn is both healthy and delicious! The sweetness of the corn balances wonderfully with the kale, while the garlic butter adds flavor to the dish overall. I served this dish with my Lime Basil Pesto Chicken, and the two together were awesome.
