Garlicky Great Northern Pesto Bean Dip with Veggie Chips

We all know that fall is the time for football games and football parties with family and friends to watch our favorite teams win. Sometimes we lose, too, but it’s still fun to get together and cheer our team on with our friends. Another part of celebrating our team is the appetizers we eat while watching, and sometimes those appetizers are not all that good for us. We usually end up calling them a meal, in order to make up for all those extra calories. Well, I love a good bean dip, and beans are healthy. Thinking about this, I decided to make a bean dip that would both taste good and be healthy at the same time. My Garlicky Great Northern Pesto Bean Dip with Veggie Chips is both healthy and delicious!

I decided to use great northern beans as a base for my dip because of their great flavor. Also, these beans will take on the flavor of whatever you add to them, so they’re great for this purpose, but they are nutritional as well. After thinking about it, I wanted to create a garlicky basil pesto flavor, so I added fresh basil, extra virgin olive oil, and fresh garlic. The best part about this dip is that it is so easy to put together, and it doesn’t come in a jar from the store. All you need is your ingredients, a food processor or blender, and you can make this delicious dip in just a few minutes. How easy is that!

Garlicky Great Northern Pesto Bean Dip with Veggie Chips

  • 2 – 16 ounce cans great northern beans, drained and rinsed
  • 2 cloves garlic chopped (more or less to taste)
  • 2 tablespoons fresh basil chopped
  • 2 tablespoons extra virgin olive oil
  • Sea salt and fresh ground black pepper to taste

https://learnfromyesterday.comDrain and rinse the cans of beans. Chop your garlic cloves and fresh basil. Put the beans, garlic, basil, and olive oil in the food processor. Blend together thoroughly until smooth and creamy. Add sea salt and fresh ground black pepper to taste. Blend again briefly. Put the bean dip in a bowl and serve with all natural veggie chips.

I like to serve my dip with Mediterranean Herb Veggie Chips, or any other all natural veggie chip that will complement the flavor of my dip. This way I continue to keep my appetizer on the healthy eating track. Eating healthy doesn’t have to be bland. In fact, healthy eating can have awesome flavor, and this dip is packed with flavor, especially if you like garlic. If you’re not a fan of garlic, put in less garlic or even none, if you prefer. Fresh Homemade Pico de Gallo

Whenever we go out to a Mexican restaurant, I always look forward to freshly made pico de gallo and guacamole. I can’t help it. I love both! So I decided it was time to make some Fresh Homemade Pico de Gallo to have here at home with some chips and a glass of Sangria. Pico de gallo and some of my homemade tasty guacamole with some chips is always a welcomed treat in our family!

At this time of year, it is a great time for freshly grown tomatoes. Fresh tomatoes, some onion, cilantro, a jalapeno, and some fresh lime juice are the basic ingredients to any good pico de gallo. In my mind, the simplest ingredients create the greatest taste experiences. That’s true when making delicious Fresh Homemade Pico de Gallo!

Fresh Homemade Pico de Gallo

3 medium fresh tomatoes with seeds removed and diced
1/2 white onion chopped (more if desired)
1 fresh jalapeno with seeds removed and finely diced (use 2 jalapenos if desired)
1/4 cup fresh cilantro finely chopped
1 fresh lime juiced
Sea salt to taste

Prepare and cut up the tomatoes, onion, jalapeno, and cilantro. Mix together in a bowl. Pour the fresh lime juice over all of this and mix together. Add sea salt to the pico de gallo to taste.

Tasty Guacamole with Sweet Chili Pita Chips

I love guacamole ever since we spent some time in Puerto Vallarta, Mexico. While there we had some of the best guacamole I had ever tasted. It was absolutely delicious and so tasty! I have tried to recreate this guacamole ever since that time, and I finally think I have succeeded with my Tasty Guacamole with Sweet Chili Pita Chips. The pita chips are something I found here in local stores, but the guacamole is my own adaptation of all the different recipes I have tried.

https://learnfromyesterday.com I start with the typical ripe avocados, cilantro, fresh lime juice, and onion. For me, it only seemed appropriate that I use a red onion. I then added jalapeno, which some recipes have and which I felt was a necessity in order to do this right. I added my favorites, minced garlic and Roma tomato. I then added ground black pepper and a little sea salt to complete my Tasty Guacamole with Sweet Chili Pita Chips. The Sweet Chile Pita Chips came about when I purchased a package for hummus a while back and everyone here loved the chips.

4 ripe avocados
2 limes, juiced
1 Roma tomato diced
1/2 cup red onion diced
1/2 cup cilantro chopped
1 jalapeno with seeds removed and diced (for more heat add 2 jalapenos)
1 teaspoon garlic minced
1 teaspoon ground black pepper Sea salt to taste

Cut the ripe avocados in half, remove stone, and scoop out the flesh with a spoon. Cut the flesh of the avocados into pieces and add the juice of two limes. Add to this the Roma tomato, red onions, cilantro, jalapeno, garlic, and black pepper. Add sea salt to taste and mix up thoroughly with a spoon. Once done, you are ready to serve. Serve with pita chips or chips of your choice.
