Savory Chicken Mushroom Soup with Great Northern Beans

It’s that time of year when everyone enjoys a delicious bowl of hot soup. There are a wide variety of soup recipes out there to choose from when making soup, so you have to decide a few things before choosing the recipe that’s right for you. Are you a clear broth soup eater or do you prefer a cream soup? I have a tendency to choose the clear broth soups because they are usually healthier and for the most part, lower in calories. I also love a soup that has lots of vegetables. So when I put together my latest soup combination, I came up with my Savory Chicken Mushroom Soup with Great Northern Beans and best of all, it is done in a crock pot!

I love the rich flavor that mushrooms add to any dish and in soup, they are delicious. By using only chicken breasts, this soup is lower in calories and healthier. In addition to mushrooms and chicken breasts, I’ve added carrots, celery, and onions. These three vegetables with fresh garlic added always make a clear broth soup better tasting. Finally, adding the right seasonings to all of this help enhance the overall flavor of the soup, while making this soup a sure winner!

  • 2 to 4 boneless chicken breasts without skin cut up
  • 1/8 cup extra-virgin olive oil
  • 1 large onion cut up
  • 2 to 3 garlic cloves chopped
  • 1 and 1/2 cups carrots, peeled and sliced
  • 1 cup celery sliced
  • 1 pound sliced mushrooms
  • 64 ounces vegetable or chicken broth
  • 1 tablespoon dried basil leaves
  • 1 teaspoon dried parsley
  • Sea salt and ground black pepper to taste
  • Optional: Serve with fresh lemon juice or dash of hot sauce

Put the olive oil in the bottom of the crock pot. Cut up, slice, and prepare your ingredients. Then throw in the onions, garlic, carrots, celery, sliced mushrooms, and cut up chicken breasts. Add broth and seasonings next. Cover the crock pot and set to cook for 6 to 8 hours. When done, serve your soup.

Delicious Oven Roasted Sweet Potato Slices with Thyme

There are so many wonderful ways to cook a sweet potato, but around this time of year everyone is thinking about eating healthier. An oven roasted sweet potato is a great way to have a healthy sweet potato with your meal. These sweet potatoes are so delicious, you won’t miss the brown sugar, butter, or marshmallows at all. Sweet potatoes are definitely sweet enough on their own, so why not roast them with a few seasonings and have my Delicious Oven Roasted Sweet Potato Slices with Thyme!

http://learnfromyesterday.comIt doesn’t take much to make a delicious oven roasted sweet potato. All you need is some extra-virgin olive oil and the right seasonings. Thyme is an excellent seasoning to add flavor to a sweet potato. Add some garlic and onion powder as well, and the flavor is outstanding! Lightly use some sea salt, but ever so lightly, and ground pepper to taste, and the result is perfection!

2 to 4 sweet potatoes peeled (depending on the number of people and size of the potatoes)
Extra virgin olive oil
Garlic powder to taste (1/2 teaspoon to 1 teaspoon)
Onion powder to taste (1/2 teaspoon to 1 teaspoon)
Ground thyme to taste (1/2 teaspoon to 1 teaspoon)
Sea salt lightly and black pepper to taste

These are the basic seasonings, but you can add any other seasonings you may like. Preheat your oven to 475 degrees. Prepare your baking sheets with parchment cooking paper. Cut the each potato in  ½” slices to create your oven roasted sweet potato slices just before you are ready to cook. You may do this sooner and leave in cold water, but I prefer to do it just before baking.

Put the slices in a large bowl and pour some olive oil over the slices. Toss the slices until all of them are coated with some olive oil. They do not need to be drenched, but just coated. Once coated in olive oil, season the slices with the above seasonings to taste. It does not take much of any of the seasonings to add flavor, so add seasonings carefully. Place the slices evenly on your baking sheets. You may add any additional seasonings you may like, but if serving guests, I suggest you always ask about preferences as some people may not like or tolerate well certain seasonings. When done seasoning, place the baking sheets in the oven for about 16 to 20 minutes or until fork tender. Watch them carefully when baking so that you do not burn them.

Delicious Cranberry Apple Smoothie with Mango

With the New Year approaching, it is definitely time for a new smoothie! This time of year brings with it the availability of cranberries, so my new smoothie definitely has cranberries. Blended together with other fruits, this smoothie has both the tart flavor of cranberries along with the sweet flavors of Granny Smith apples and mango slices. The result is the fabulously Delicious Cranberry Apple Smoothie with Mango!

The cranberry health benefits are a decrease in the risk of urinary tract infections and also, an increase in the health of the cardiovascular system. It’s the combined impact of cranberry antioxidants and anti-inflammatory phytonutrients in cranberry that’s responsible for these results. Adding cranberries to a smoothie is definitely a way to increase the health benefits of your smoothie.

  • 1 cup ruby red grapefruit juice (no sugar added) or juice of your choice
  • 1 cup frozen fresh mango
  • ½ cup frozen fresh cranberries
  • 1 Granny Smith apple with skin cored and cut up
  • 1 tablespoon organic honey

Salmon with Sweet Bourbon Glaze

I love salmon, and when it’s served with a sweet bourbon glaze, I love it even more. Although I have eaten salmon with a sweet bourbon glaze at restaurants many times, I decided it was time to do this recipe at home. I researched sweet bourbon glaze and discovered that there are so many different ways to do this. From what I learned, I just chose what I liked best from many of them, adjusted the amounts and ingredients to my preferences, and the result was awesome. My Salmon with Sweet Bourbon Glaze is the perfect blend of some of my favorite ingredients, and it is delicious!

http://learnfromyesterday.com Of course, most of the recipes use bourbon, but the amounts varied anywhere from one tablespoon to one cup. I chose somewhere short of the middle for this ingredient, and it was the perfect choice for my taste. Some had butter, and some did not. I chose to leave the butter out. Most have brown sugar in varying amounts, and I chose middle ground here, or what I thought was just enough, but not too much. Many had garlic, and I have never said no to garlic, so I included garlic as well. Now the rest of the ingredients varied quite a bit, so I decided to use what I thought would make this sweet but tangy. I chose apple cider vinegar, Dijon mustard, Worcestershire sauce, and molasses. Molasses adds just that right taste of what I call “Southern” for me. The end result was bold and delicious beyond my expectations!

  • 2 – six ounce pieces of fresh salmon
  • Sea salt and ground black pepper to taste
  • 1/3 cup bourbon (a better quality bourbon makes for a better glaze)
  • 1/4 cup brown sugar
  • 1 fresh garlic clove minced
  • 2 teaspoons apple cider vinegar
  • 1/2 teaspoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon molasses

Blend together the bourbon, brown sugar, garlic, apple cider vinegar, Dijon mustard, Worcestershire sauce, and molasses in a sauce pan and bring it to boil, while stirring. Reduce the heat and simmer for 8 to 10 minutes or until it reduce to about half and thickens slightly. It will thicken more as it sits at room temperature on the side cooling off to room temperature.

Then season to taste the salmon pieces with the sea salt and black pepper. Don’t over do the sea salt. Place the pieces on a pan to broil or grill. If broiling, broil the salmon three to four inches below the heating coil for 6 to 9 minutes depending on thickness, and until there is a slight crispiness on the top, but make sure the salmon is not overdone. If more than 3/4 inch thick, it may take longer. Watch carefully, and just before the last minute you can brush some of your sweet bourbon glaze lightly on the top of the salmon.

http://learnfromyesterday.comWhen done, remove the salmon from the oven and baste some more with the sweet bourbon glaze. If grilling, cook according to the directions for your grill, adding glaze lightly in the last minute and then again adding more glaze when the salmon is ready to be served. Any leftover glaze can be refrigerated for about a week or a little longer. When ready to use, bring it to room temperature and use it on fish or even chicken.

Grapefruit Strawberry Mango Smoothie Plus

I never tire of new smoothie combinations, especially before or after working out! Each smoothie combination is carefully thought out for the maximum boost I may be looking for on any particular day. Because I use mostly fruit and vegetables for my smoothies, each one is sure to be full of needed nutrients of all kinds. My Grapefruit Strawberry Mango Smoothie Plus is full of healthy nutrients and is delicious as well.

http://learnfromyesterday.comThis smoothie uses grapefruit, so if you are on certain medications for cholesterol control, you may want to substitute the grapefruit with orange segments and orange juice instead. The fruits have many of the vitamins and minerals that we all need to keep healthy. I like to use fruits with Vitamin C during the cold and flu season, to give me a little extra something to help fight germs and stay healthy. The plus in this smoothie is a carrot. This adds a vegetable to my smoothie, and it adds to the great flavor as well. All in all, this smoothie gives me the energy boost I need in the afternoon or mid-morning hours.

  • 1 large carrot peeled and cut up
  • 1 cup grapefruit segments packed in light syrup
  • 3/4 cups fresh strawberries halved
  • 1 cup frozen fresh mango slices
  • OPTIONAL: 1/2 to 1 teaspoon organic honey
